Rittenhouse Inn is a historical land mark for Bayfield, WI. It is positioned on top of hill
down town Bayfield. It is a small operation that is ran like a ma and pa bed and breakfast. The
Inn holds on to many of the old Victorian designs and themes, however it is up to date on the
food trends. The Rittenhouse has an advantage of keeping up with the current trends because of
its geographical position. When it comes to buying local the Rittenhouse Inn and other business
of Bayfield have a plethora of local organic products to choose from.
Scope and Reach
The Inn could be mistaken as in need of renovation, but that is not so, the building is rich
with historical meaning and background as one of the oldest building remaining in Bayfield.
History and Native American culture runs deep in Bayfield as it is surrounded by reservation and
some of the most prestigious natural resources. The first most attractive natural resource that
Bayfield has to offer is Lake Superior, the largest body of fresh water; second the beautiful
Apostle Islands with a total of 22 islands in total. Third Bayfield is surrounded by national forest
and many organic farms, with the most popular apple orchards.
Outside Industry Impacts
With the placement of the Rittenhouse being surrounded by opportunity to be a
full farm-to-table B&B it wasn’t accomplished or even desirable until a young man named Dave
Miller graduated from a Culinary Institute and became the head chief of the establishment. Dave
became better informed with the buzz words and popular trends and put the pieces together. He
agrees that it is a lot more work to keep up with the trend of buying local, for the reason that then
you are not working with preservatives and your time and temperature awareness becomes

heightened, with the inverse correlation to your shopping list must be smaller and more frequent.
Another issue is when items are not in season you need to be creative and come up with
alternative items for the menu without ruining the trend of the menu. When you serve farm fresh
food at your restraint you can expect a more informed consumer and a satisfied customer.
Example Analysis Rittenhouse
Rittenhouse is practicing buying local to the best of their ability. Their fish is caught and
sold to them locally, their wine is grown, fermented, and sold locally, their produce is grown
organically/locally, their meat is raised and free range grass fed locally, and their beer is locally
brewed and sold. This is what people expect when they visit Bayfield there is nothing less than
complete local and fresh standard. Bayfield has no fast food, no big shopping stores, such as
Wal-Mart or Super-One etc. The goal is to be self-sustainable, natural, healthy, and one with
nature and all of its beauty. The town has learned to become self-sufficient by supplying each
other with all the organic local goods that it has to offer and has become a success for a sleepy
little farm town.
Example Analysis Applefest
Applefest is Bayfield’s largest generator of tourists the town of Bayfield has no stop
lights or business chains of any kind and has a population of 487 people, but when Applefest
comes along it can attract 50,000 people to come and enjoy the local farm goods and small
locally supplied businesses. There are over 60 local apple vendors, 100’s of local art to be seen
and purchased. The local schools from the bay area put on a marching band and the little town
floods with people. This little town is full of local talent and has show’s every weekend called

Big Top Chautauqua; this is where local actor put on a 5 star show for tourists in a large tent at
the bottom of a ski hill and sing about the olden days of living in a small town on a big lake.
Owner’s Insight
Mr. Jerry Phillips the owner of the Rittenhouse Inn understands who is cliental are and
what they expect. He is constantly ion high alert of the best herbs and spices trying to please the
ever growing “back to nature” crowd. People are becoming more aware of how important it is to
have their livestock be local and fed healthy free range grass. Instead of inhumanely treated, fed
hormones, and shipped from the other side of the country. Buying local is crucial for the health
reason, but also can benefit your destination, as you will boost the economy in your area if you
can support your local businesses and keep the money in your town.
Future Impacts of Trend
The future of buying local and farm to table will only become more popular as people
realize how important the processes of how their food is being produced has profound
significance to their overall health and wellbeing in the long run. Also as people realize that they
do not all want to work for Wal-Mart, people will start to pay a little more money to the
individual that runs a small operation and can’t afford the bulk that a super center can. The
wealth would be better distributed if everyone didn’t have to work for a Wal-Mart. I think that
the future of this trend is going to become very real in all aspects of purchases.
