Chloramine and foodservice
• Chloramine is a small amount of ammonia added to
chlorine, forming an inorganic compound (NH2Cl). Like
chlorine, it makes water safe to drink by killing organisms,
  bacteria and viruses.
• By 2012 its use by municipalities is expected to increase to
55% due to the EPA's stricter D/DBP2 standards
• Standard carbon filters do not easily remove chloramines
because there isn’t enough carbon or contact time.
• Chloramines damage gaskets and o-rings, and react with
sweeteners in fountain syrups to form compounds that
  impact the taste

  such as THMs may be
                                 surface of the glassware

and provides lead,
    cyst and THM
        reduction.

When water is converted to
steam, contaminants left behind
 can cause scale and corrosion.
How water impacts boiler steam
Scale in boiler can cause
stress fractures and leaks Corrosion from
                                    chlorine and chlorides
• Expensive to replace
• Not carried in stock by service • Stainless steel probes
dealers, must wait for part get destroyed
• Must move equipment, can • Racks and surfaces in
dislodge flakes of scale into cabinet “rust”
  components, new problems
                                    Delimings are
Scale causes probes to expensive and labor
have false readings intensive
• Low water reading then • Some delimer chemicals
won’t heat are too aggressive and
• Could detect overheated damage surfaces
  condition, shut down unit
How water impacts
                                boilerless steam
Scale on spritzer tubes can
reduce performance
• Low steam production Stuck floats and valves
• Overheating of water • Under filling could result
injection solenoid’ in tripping of safety,
• Excessive browning of shutting down unit
food • Dry firing could occur,
                                        damaging controls,
Takes longer to heat elements
due to scale
• Wastes energy Corrosion on cabinet
• Longer cooking cycles walls and racks from
• Overfiring of heat chlorine and chlorides
  exchanges could cause
  failure
