A really simple and easy recipe for coffee lovers who also enjoy the bitter
brew in their desserts, Coffee Pie, adapted from The Prudence Penny
Regional Cookbook by Prudence Penny, makes use of readymade and baked
pie shell so all you need to do is to assemble the filling, which takes only
about 10 minutes to do. Instead of making chocolate custard, coffee is used
instead. In this recipe, a cup of strong coffee is used. It is best to use freshly
brewed coffee for superior flavor rather than instant coffee.
Ingredients:
2/3 cup granulated sugar
5 tablespoons cornstarch
½ teaspoon salt
1 cup heavy cream
1 cup strong coffee
1 egg
1 teaspoon pure vanilla extract
1 9-inch baked pie shell
Whipped cream
Directions:
In a mixing bowl, stir together the sugar, cornstarch, and salt.
In a double boiler, pour the heavy cream and coffee. Bring the water
in the boiler to a boil. Keep cooking, stirring frequently, until the
mixture is smooth and thick, about 15 minutes.
Place the egg in another mixing bowl and beat slightly. Cover with
half the coffee mixture and mix well. Pour this mixture into the top
of the double boiler, along with the second half of the coffee
mixture. Cook for 2 minutes.
Allow the coffee mixture to cool. Stir in the vanilla. Pour into the
baked pie shell. Top with whipped cream.
