4. Healthy Cheesecake (Ingredients)

Yields 12-16 servings
Ingredients
Crust:
• 1 cup whole wheat pastry
flour
• ½ tsp baking powder
• ¼ tsp salt
• 1/3 cup organic coconut oil
• 2 Tbsp milk
• 2Tbsp agave nectar
Filling:
• 8 oz cream cheese
• 1 cup agave nectar
• 3 Tbsp flour
• 1 tsp lemon zest
• ¼ tsp salt
• 1 tsp bourbon vanilla
• 6 eggs
• ¼ cup light cream or milk
5. Healthy Cheesecake (Directions)
Preheat oven to 450° F.
Crust:
1. In a large bowl, combine the first
four ingredients (flour, baking
powder, salt, and coconut oil);
blend until crumbly.
2. Combine milk and agave and
sprinkle over mixture until dough
is just moist enough to hold
together.
3. Form into a ball. Press mixture
over bottom and 2½ inches up
side of 9-inch spring form pan.
4. Chill.
Filling:
1. In a large bowl, beat cream cheese
until creamy.
2. Add agave, flour, lemon zest, salt and
vanilla; beat well.
3. Add eggs, one at a time, beating well
after each.
4. Blend in cream.
5. Pour filling into prepared pan. Bake at
450°F for 10 minutes; reduce heat to
200°F and bake for 60 to 70 minutes or
until filling is almost set or golden brown.
6. Cool. Refrigerate for several hours or
overnight before serving.

6. Coconut Oil Brownies (Ingredients)

Prep: 10 minutes, Bake: 25-35 minutes

Ingredients
• ¾ Cup Melted Organic Coconut Oil
• 1 ½ Cups Sugar
• ¾ Cup All-Purpose Flour
• ¾ Cup Unsweetened Cocoa
• 3 Large Eggs
• 1 Cup Milk Chocolate Chips
7. Coconut Oil Brownies (Directions)
1. Preheat oven to 350 F and line an 8x8 or 9x9
baking dish with parchment paper.
2. In a large bowl add coconut oil, sugar, flour, cocoa
and eggs. Stir until well combined. Stir in the
chocolate chips.
3. Pour batter into prepared baking dish, bake 25-35
minutes depending on the size of your baking dish
(shorter time for the 9x9). Let brownies cool
completely before cutting.

8. Homemade Chocolate Fudgesicles
(Ingredients)

Time: several hours
Ingredients
• 2 Tbsp cocoa powder
• ½ cup canned full-fat
coconut milk
• 2 small, very-ripe bananas
• Pinch of salt
• ½ tsp pure vanilla extract
• Agave nectar to taste
9. Homemade Chocolate Fudgesicles
(Directions)
• Combine all items in a blender.
• Pour into popsicle molds and freeze.
• A good way to remove pops is to run the popsicle
mold under room-temp water for about 15
seconds, then gently twist.

11. Coconut Flour Coffee Cake (Directions)
1. Preheat oven to 325ºF and adjust rack to middle position.
2. Place all the batter ingredients in a food processor or blender
and blend until smooth.
3. Pour batter into a buttered 8x8 inch baking dish.
4. Wipe out food processor bowl with a paper towel or cloth.
Place nuts, cinnamon, honey and butter in the bowl of a food
processor. Pulse until nuts are coarsely chopped and
ingredients bind together.
5. Drop spoonfuls of topping over batter and then using a butter
knife, swirl the topping into the top layer of the batter.
6. Bake for 40-45 minutes until golden brown. Let cool for 20
minutes.
