Use Cake Flour to make cookies light and fluffy
Use shortening to keep cookies from spreading
More brown sugar will make a browner cookie
Baking soda is essential for browning and crispness
3. Cookie Dough Ingredients by Recipe

BATTER BATTER BATTER
Crisp and Dense Crisp on the outside, chewy on Fluffy and Chewy

• 2 ¼ cups All Purpose flour • 2 ¼ cups All Purpose flour • 1 ¼ cups All Purpose flour
• 1 teaspoon salt • ½ teaspoon salt • 1 cup cake flour
• 1 teaspoon baking soda • 1 teaspoon baking soda • ½ teaspoon salt
• ¾ cup granulated sugar • ½ cup granulated sugar • 1 teaspoon baking soda
• ¾ cup packed brown • ¾ cup packed brown sugar • ½ cup granulated sugar

• 1 cup butter • 1 egg • 1/2 cup Butter
• 2 eggs • 2 teaspoons vanilla • ½ cup shortening

4. Step 1 – Choose A Recipe and Prepare Batter
1. Cream Butter (and shortening if you’re using it) till fluffy
Add sugars and beat till fluffy
Add liquid (egg(s) + vanilla)
2. Incorporate dry ingredients:
Flour, baking soda and salt should be whisked together prior to
incorporating
3. Divide one batch of batter into two or three bowls and add your favorite
mix-ins to each
5. Step 2 – Mix it up with Mix-ins
Try any combination of chocolate, fruit
nuts etc. that you like.
Our favorites:
1. Dark chocolate with pecans and
crystallized ginger
2. Milk chocolate with walnuts
3. White chocolate with macadamia nuts
4. Butterscotch with bits of toffee
5. Semi-sweet chocolate with coconut
flakes, oats and dried apricots (or dried
cranberries)
We find best results dividing each batch of
batter into two sets of mix-ins. Then use
one cup of chocolate plus ½ cup of each
additional mix-in per ½ batch of batter.
6. Step 3 – Cook, Cool, and Enjoy!
Bake at 350 degrees for 10-12 minutes
Cookies should not be overcooked, but nicely browned on the outer
edges (slight undercooking is better than over cooking)
Allow to sit on baking sheet for 1-2 minutes before moving them to a
cooling rack
