Cooking time : 25 minutes Serving : 6-8
Ingredients:
½ Cup Zafarani Basmati Rice
2 Pieces of Chicken breasts
4 Tablespoons Oil
1 Small Onion, chopped
2 Tablespoons of Flour
4 - 5 Cups of Chicken stock
2 Teaspoons of Lemon Juice
Parsley
Chopped Lemon wedges
Directions:
Wash the rice and put it aside. Cut the chicken into
1cm cubes.
In medium saucepan heat oil over medium heat, then
add the chicken and onions, stirring occasionally about
2 – 4 minutes until the onions are softened.
Add flour, stirring for 30 seconds. Gradually add stock
and rice, and then heat to boiling, strring constantly.
Simmer on low heat until the chicken and rice are
tender, 20-22 minutes. Stirring occasionally, add more
stock as needed.
Add lemon juice, and then sprinkle with parsley. Serve
it with lemon wedges
