It is an Indian delicacy that is eaten as a snack.
It is also known as the Indian short-bread and fans usually enjoy having it
with tea.
There are a number of varieties and flavors that the snack is made in but
the most loved is the basic flavor which is easily available across bakeries in
the country.
A nankhatai recipe is most demanded during the festive season when sweet
and light snack finds special preference.
3. The ingredients for the nankhatai
recipe
ร 125 Grams Maida (Maida Flour /
Fine ground wheat flour)
ร 40 Grams Gram Flour (Besan)
ร Half Tea spoon baking soda
ร One tea spoon baking power
ร 20 grams Sooji (fine rava / cream
of wheat)
ร Nutmeg (2-3 pinch)
ร Half tea spoon Elaichi powder
(cardamom powder)
4. 80 grams butter (or Ghee)
110 grams sugar
Half Table spoon curd (dahi)
1-2 table spoon milk
Charoli or Almonds for seasoning and
decoration

Powder the sugar into a grounded
form and mix it with butter/ghee
thoroughly to make it a light and
smooth concoction.

Mix the maida flour, gram flour,
baking soda and baking powder in a
separate vessel and keep it aside
after sifting the dry ingredients.

Mix curd (dahi) with the mix of
butter and sugar power to mix it well
and make into a fine creamy paste.

Add the sifted dry ingredients with
the paste of butter, sugar power
and dahi. Also add the sooji,
cardamom and nutmeg powders to
the paste.

Mix the ingredients and make a
dough out of it. The dough needs to
be created without kneading the
mix. If the dough does not seem to
mix well, the milk may be added.

After the dough is created, small
balls of dough should be pinched
out and rolled into slightly flattened
patties. You can use charoli or
almond to embed into the patties to
create a decorative look.

placed in a baking tray with enough
space between them to rise while
baking.

in a pre-heated oven at 180
degrees for a duration of 20-25
mins. A light golden appearance for
