Tri-National, Inc., is a Missouri-based truck transportation company that contributes to multiple charities, including the KILO Diabetes and Vascular Research Foundation. Through the patronage of companies like Tri-National, Inc., the KILO Foundation conducts research in an effort to find a cure for diabetes as well as promote the general health of people living with the disease. A metabolic illness, diabetes can afflict people in several ways, but primarily exists in two main forms.

Background The idea for the project came from a community eco-design forum that featured the innovative work of Brita Riley. Riley created the first hydroponic window farm installation located in New York City in February of 2009 (Riley). Her objective was to teach those who lived in urban food deserts and worked in office buildings an affordable and easily maintainable way to grow their own food and personally involve them in issues related to agriculture and the environment. Food deserts are an area where large-scale supermarkets have abandoned--leaving the entire community with little or no access to affordable, quality food (Bullard). Riley created a community forum using social media in order to encourage other artists and gardening enthusiasts to develop their own versions of her hydroponic, soilless, gardening system. And she states that The ultimate aim of the Windowfarms project, however, is not to create a perfected physical object or product. Rather, the most highly valued result is a rewarding experience with crowsdsourced innovation. We are interested in the participants’ experience as they design for their own microenvironments, share ideas, rediscover the power of their own capacity to innovate, and witness themselves playing an active role in the green revolution (Riley). Thesis Even though low income groups produce the lowest ecological footprints, cohort groups who fall below the poverty threshold would benefit in many ways from learning about sustainability practices because they demonstrate the largest need for these principles (Echo). INTRODUCTION ◊ 1 MESSAGE FROM THE SURGEON GENERAL Our nation stands at a crossroads. Today’s epidemic of overweight and obesity threatens the historic progress we have made in increasing American’s quality and years of healthy life. Two-third of adults1 and nearly one in three children are overweight or obese.2 In addition, many racial and ethnic groups and geographic regions of the United States are disproportionately affected.3 The sobering impact of these numbers is reflected in the nation’s concurrent epidemics of diabetes, heart disease, and other chronic diseases. If we do not reverse these trends, researchers warn that many of our children—our most precious resource—will be seriously afflicted in early adulthood with medical conditions such as diabetes and heart disease. This future is unacceptable. I ask you to join me in combating this crisis. Every one of us has an important role to play in the prevention and control of obesity. Mothers, fathers, teachers, business executives, child care professionals, clinicians, politicians, and government and community leaders—we must all commit to changes that promote the health and wellness of our families and communities. As a nation, we must create neighborhood communities that are focused on healthy nutrition and regular physical activity, where the healthiest choices are accessible for all citizens. Children should be having fun and playing in environments that provide parks, recreational facilities, community centers, and walking and bike paths. Healthy foods should be affordable and accessible. Increased consumer knowledge and awareness about healthy nutrition and physical activity will foster a growing demand for healthy food products and exercise options, dramatically influencing marketing trends. Hospitals, work sites, and communities should make it easy for mothers to initiate and sustain breastfeeding as this practice has been shown to prevent childhood obesity. Carter 1 Why Are The US Citizens Rapidly Becoming More Obese? Results of a first-of-its-kind trend data analysis involving 188 countries worldwide indicate that the highest percentage of people with obesity – 13 percent of the world’s total – reside in the United States, a nation that accounts for just 5 percent of the overall global population. Approximately 160 million US citizens are either overweight or obese, with almost 60 percent of adult women and 75 percent of grown-up men living in the country constituting this population group. American youngsters are not spared either, as nearly 30 percent of girls and boys aged 20 years or younger are plump and flabby, indicative of an 11 percent increase in the number of obese American children since 1980 (Murray et al.). Indeed, a majority of US citizens is currently fatter than the recommendation of medical science, and weights are still on the rise despite efforts to educate individuals about the health risks associated with obesity. Why are Americans rapidly becoming more obese? This paper argues that the US citizens are becoming more overweight because of American culture, technical changes in the preparation of food, and inactivity. The importance of researching why Americans are increasingly becoming overweight is manifest in the costs of obesity for individuals and the nation at large. Obesity, which in simple terms refers to an excess of body fat that causes adverse effects in the health and overall wellbeing of individuals, exacerbates the risk for contracting various illnesses and impairs life quality for both children and adults (Rippe 1131). The health risks include heart disease, osteoarthritis, polycystic ovarian disease, sleep apnea, gout, and a wide range of cancer types, such as liver, kidney, pancreatic, and breast cancers, all of which can lead to death, causing pain and distress to the relatives and friends of the deceased person. Fatness also increases the possibility of developing metabolic conditions, such as diabetes, fatty liver syndrome, and hypertension (Cusi). The burden of such illnesses is not trivial, as they can lead to premature death, disability, and lost productivity, all of which have significant implications for the obese individual, his or her family and friends, and the United States at large. Obesity also leads to an increase in the financial resources that Americans spend on healthcare either as individuals or as a nation. Indeed, the medical costs associated with being grossly fat are enormous and increasing, evident in the findings of a study conducted by experts in the medical care sector from 2008 to 2015. The results of the research indicate that the United States expends at least $209 billion of its medical care budget on obesity (Kim, & Basu 602). Putting that into perspective, consider that the figure is nearly half of the estimated US deficit for the year 2018, implying that the country spends almost one in every five dollars allocated to h.

However, according to (Healthy People 2020), most Americans don't check their menu and are lazy in taking apart in physical activities to the required levels as a way of maintaining proper health. According to CDCP (2013), fruit consumption among adults is 1.1 times in a day, and the use of vegetables on a daily scale is 1.6, with adolescents recording the lowest use of both fruits and vegetables. The statistic shows that the average daily consumption of both fruits and vegetables among Americans doesn't meet the recommended intake of fruits and vegetables. About 81.6% and 81.8% of American adults and adolescents respectively don't take part in physical activities on a recommended daily scale. Running Head: Obesity, Healthy Diet and Health 1 Obesity, Healthy Diet and Health 19 Obesity, Healthy Diet and Health PUH 6301 Public Health Research Abstract Having a good nutrition habit, healthy body weight, and physical activities are essential aspects of good health and wellness. The combination of all three factors is critical in reducing the chances of getting severe health complications such as diabetes, hypertension, high cholesterol, cancer, stroke, and heart complications. Managing a good health condition also relies on how one adhere to regular physical exercises, a well-maintained body weight, and a healthy diet. However, according to (Healthy People 2020), most Americans don't check their menu and are lazy in taking apart in physical activities to the required levels as a way of maintaining proper health. According to CDCP (2013), fruit consumption among adults is 1.1 times in a day, and the use of vegetables on a daily scale is 1.6, with adolescents recording the lowest use of both fruits and vegetables. The statistic shows that the average daily consumption of both fruits and vegetables among Americans doesn't meet the recommended intake of fruits and vegetables. About 81.6% and 81.8% of American adults and adolescents respectively don't take part in physical activities on a recommended daily scale. These behaviors are among the leading factors that contribute to the rising cases of Obesity. Approximately 1 out of 3 US adults, which represents 34 % and 1 out of 6 adolescents and children, which is 16.2 %, are obese. Obesity-related complications include stroke, heart disease, and type two diabetes. The current in death cases is as a result of the obesity-related complications. Besides the death cases, obesity-related diseases cots this country millions of money annually, making it one of the most significant burdens that this country is struggling with regards to the health care system. Introduction Maintaining a healthy diet is an essential factor that determines how healthy our bodies become. We must retain less sugar, salt, and fats diet daily. Cases associated with obesity are not causing deaths but also taking so much of this country's financial resources. Every year both the federal, state, and county governments invest million into the health sector as a way of improving the infrastructures required to deal with obesity-related complications. Any healthy combines a variety of foods such as cereals, legumes, proteins, fruits, and vegetables. Research shows that obesity is gradually grown into a global crisis with WHO initiating campaigns aimed at establishing the importance of maintaining a healthy diet (Abidin, 2014). Running header: THE MENACE OF OBESTIY 1 The Menace of Obesity Rodney Martinez Columbia Southern University The menace of obesity: Stern & Kazaks (2009) defined obesity as a health condition that is associated with excess body fat that is gained by environmental and genetic factors that are difficult to control during dieting. Obesity is classified as having a Body Mass Index (BMI) of 30 or above. BMI is a tool that measures obesity in an individual. The personal or community effects of obesity will be discussed. It will include a discussion on one factor that contributes to childhood or adult obesity and two prevention measures that relate to the selected factor. Finally, a discussion on one sociological theory that relates to the selected contributing factor to obesity will be given to provide a better understanding on what we as Americans define being obesity. Effects of Obesity The cost of obesity is known to go beyond those pertaining to personal health, including heart diseases, type II diabetes’ and bone and joint disease. Obesity has a lifelong financial impact on the individual, family members and the community at large, because of the medical bills to treat diseases. Kopelman (2010) stated that this worsens the situations since this individual is less productive financially due to the health condition and thus leaving the burden to family members and the community. According to a recent report from the Department of Health Policy at George Washington University's School of Public Health and Health Services, the tangible annual health- and work-related costs of obesity for a woman amount to $4,789 more than a woman of average weight would pay. For an obese man, those added costs are $2,646 annually. One of the main contributing factors to childhood or adult obesity is a lifestyle. Eckel (2003) argued that overeating with in a combination with a sedentary lifestyle has been known to contribute to obesity. If you take foods in which a high percentage of calories come from high-fat, refined and sugary foods that will easily make you gain weight and high chances of being obese if you continue with that diet for long without counteracting practices. As more American families consume diets on the go and more people looking for low-cost foods, more people will reach high-calorie and fatty foods and beverages such as fast food. Preventive Measures of Obesity One of the preventive measures that can be taken to avoid obesity is changing behaviors which will affect these lifestyle choices. Choosing whole grains such as whole bread and brown rice rather than white rice and while bread. These foods are richer in fiber and nutrients and thus the body absorb them more slowly and therefore will not cause a rapid spike in insulin. Eating less fatty foods will also reduce excess calories in the bath. (Waters, E. 2010) stated that another preventive measure that is recommended is exercising every day, this will help in burning exce.

Exploring Food Access and Health Disparities Sarah Buila, Southern Illinois University, Illinois, USA Abstract: I joined the wellness committee at the counseling center where I worked. We talked about how to increase our health habits and those of our co-workers. We organized lunch hour walking parties, got group discounts at a health club and decided to have a potluck luncheon in order to share our healthy recipes and sample the food. My co-workers talked about recipes that are low in fat, low insaltandsugarless.Often thismeantartificialsweetenersandfatsubstituteswerepartof theirrecipes. No one said anything about avoiding processed foods or eating less meat. No one said anything about eating more fresh fruits and vegetables, whole grains or organic and locally grown foods. It was at this very moment that I realized I was from a different planet. The planet I come from calls for a much different diet. The planet that I’m from has poor and affluent people alike who are obese. While in some parts of the world people are starving. Race, class, and gender influence health outcomes. What we eat is influenced by outside factors and I see people getting further away from the source of all food, theearth.Food isonecommondenominator inhealthdisparities.Onmyplanet therearedispar- ities in access to healthy foods. Part of the solution is related to broadening awareness. Coming up with solutions means coming up with new definitions about what is healthy food, and redefining our roles as health care practitioners/world citizens. Could it be that there is a diet that is not only good for you, but good for your global neighbors and the earth? Keywords: Diet, Health Disparities, Food Access, Global Health THIS PAPER EXPLORES the relationship between health outcome disparities andaccess to food prefaced on the principle that diet is one of the most important factorsimpacting health. It is not recent news that there are health disparities according to racial/ethnic, gender, and socio-economic status. Much of the literature which ad- dresses the problem of health disparities is focused on proving they exist. Identifying causes for these disparities is a much more complicated endeavor. If we are going to close the gaps between health disparities it is a worthwhile endeavor. Contributing to the difficulty in identifying causes is the multifaceted nature of human health and the individual and varying contexts which support (or don’t support) health and wellbeing. These facets include heredity, access to health care and disease prevention, lifestyle, stress, and diet. The focus of this article is on food and health conditions resulting from dietary choices and food availability. Health Disparities Health disparities exist for many different vulnerable populations. Worldwide, poverty is a significant indicator of health disparities. People who are poor experience a higher prevalence of chronic disease, higher mortality rates, stress, and lower life expectancy .
