Today, Eduardo, a boy of 6th
level, invites me to have lunch
with his family. The main
course is a traditional dish
from La Mancha called
“Caldereta”. I’m very
interested in the way it is
cooked so I ask him to show it
to me.
In the kitchen, here are
the ingredients for 4
people:
-1 kg or 1kg and 1/4 of
lamb meat .
- 1 head of garlic.
- 2 onions.                    …
     …                     - 2 medium sized
                           tomatoes
                           - 1 cup of white wine.
                           - 1 cup of brandy.
                           - 1/2 a cup of dry
                           wine
                           - A little olive oil.
                           - Oregano to your
                           liking.
                           - 2 leaves of bay.
                           - Black pepper to
                           your liking.
                           -1/2 a glass of water.
                           - Salt.
And now, let me
show you how to
cook it, step by
step.
Chop the lamb …
… onions,   garlics and tomatoes.
Put them all in a saucepan. Don’t turn on the cooker yet!
Add the olive oil …
… bay, oregano, black pepper and salt…
… white wine …
… brandy …
And the dry wine. Don’t worry about boozes, alcohol desappears after few minutes on fire.
Finally, add water and turn on the cooker
now.
Let it boil hardly for a few minutes in order to alcohol evaporates.
Then get the cooker temperature lower and cover the saucepan.
More or less after an
hour, the sauce reduces
and becomes denser.

The food is ready to eat!
In Spain, it is said:
“Que aproveche”.

Umm, delicious!!
