1. Thyme soup

INGREDIENTS:
4 slices of bread
2 onions
2 garlic cloves
4 eggs
1l of water
Olive oil
4 sprigs of thyme
50 gr of grated cheese
salt
PREPARATION:
Brown the slices of bread in the oven.
Rub with garlic and distribute in soup bowls.
Fry the chopped onion in some olive oil till
it’s caramelized.
When it starts turning brown pour one litre
of boiling water and a the sprigs of thyme
and let it boil for 20 minutes.
Pour the thyme broth on the slices of bread
and add one egg and some cheese and stir all
the ingredients.
This is a traditional Catalan soup, with a very humble origin, but a wise and
healthy soup. It is digestive, diuretic, antiseptic, etc, finally a medicinal
soup. And especially with a delicious and very aromatic flavor.
