Christmas Day 3
Welcome to day 3 of our Count Down to Christmas series. Today we are in the kitchen for my
famous Christ mas t reat recipes. You may see my previous posts about creative wrapping ideas
here and creative gift ideas here.
Each year since I’ve been married I prepare various
Christmas treat recipes for my husband’s large family. Each year it seams to grow… something
about kids growing up and having families of their own… who ever said they could do that
See the goodies lined up to the left of everyone… and some of the family was missing!
So here are a few of our favorite Christmas treat recipes.

Banana Bread (or muffins)
½ cup butter, softened
1 cup sugar
2 eggs
2 cup all-purpose flour
½ teaspoon soda
3 ripe bananas, mashed
½ cup broken pecans (opt)
Preheat oven to 325.
Cream butter, add sugar. Cream together. Add unbeaten eggs and mashed bananas. Sift flour,
salt, and soda together and add to mixture. Add pecans. Pour in greased loaf or muffin pan and
bake (1 hour for bread, 25 minutes for muffins or until cake tester comes out clean).
2. Note: The mixture will be dry until you add your bananas. Don’t add liquid! Bananas are best ripe.
Defrosted frozen bananas work great too.
Everyone loves this recipe.
Cranberry Bread
Yields: 1 large loaf or 4 mini loaves
Ingredients:
2 cup flour
1 cup sugar
1 teaspoon cinnamon
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup walnuts or pecans, chopped
1 cup whole cranberries
3/4 cup orange juice
1/4 cup vegetable oil
1 egg
1 teaspoon grated orange rind
Directions:
Preheat oven to 350. Stir together in a large bowl: flour, sugar, cinnamon, baking powder, soda and
salt.
When well blended, add walnuts and cranberries. Stir to coat nuts and berries. In a separate bowl,
stir orange juice, vegetable oil, egg and orange rind with a fork until well blended. Pour over the dry
ingredients; stir just until dry ingredients are completely blended into wet ingredients. Pour into
greased 9×5 loaf pan (line bottom with wax paper). (I grease the pan by spraying it with Pam, then
place the waxed paper on the bottom, and I spray it with Pam also.)
Bake 350 for 60-70 minutes. Check it at 60…top should feel firm not soft when gently pushed.
Turn out on cake rack. Peel off waxed paper. Turn bread upright and cool on rack.
Bread freezes very well. Wrap in two layers of plastic wrap and place in freezer storage bag to
freeze.
Haystacks
Ingredients:
1/3 cup cocoa powder
2 cups sugar
1/2 cup milk
1/2 cup butter or margarine
1 teaspoon vanilla extract
2 cups oats, rolled, not cooked
1 cup coconut shreds
1/2 cup pecans, chopped
Directions:
In a large saucepan, combine cocoa, sugar, milk and butter. Heat, stirring constantly, over medium-
3. high heat until the mixture boils. Boil 2 to 3 minutes.
Remove from heat, and stir in vanilla, oats, coconut and pecans. Stir until stiff.
Drop in heaping teaspoonfuls on waxed paper. Cool.
Makes 24 to 36 “haystacks”.
Mexican Wedding Cakes
Ingredients:
1/2 cup butter or margarine, softened
1/2 cup shortening
1 1/2 cups powdered sugar, sifted
1/4 teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 cups walnuts, finely chopped
Directions:
Preheat oven to 325 degrees.
Beat butter, shortening and one cup powdered sugar until fluffy.
Add salt and vanilla, and beat well. Stir in flour, 1/3 at a time. Mix in nuts.
Shape dough into 1″ balls. Bake for 20 – 30 minutes, until lightly colored.
While warm, roll in remaining one-half cup powdered sugar, and cool on a wire rack. When cool, roll
in remaining sugar.
Fudge Brownies
½ cup butter or margarine, softened
3 ounces unsweetened chocolate, chopped coarsely
1 cup sugar
2 eggs
1 teaspoon vanilla
2/3 cup all-purpose flour
¼ teaspoon baking soda
½ cup chopped pecans or walnuts (optional)
Preheat oven to 350 degrees.
Using a medium saucepan, melt butter and chocolate on low heat while continuously stirring.
Remove it from the heat and let cool a bit.
Grease a 9” x 9” x 2” pan. Add sugar to chocolate mixture and mix well. Add the eggs to the
chocolate mixture and mix until just combined. Mix in the vanilla.
Using a small bowl, mix together the flour and soda. Add to the chocolate mixture. Stir until just
combined. Add nuts if desired. Spread into the pan.
Bake for 25 minutes.
4. Peanut Butter Balls
1 ½ cup peanut butter, creamy
16 ounces powdered sugar
1 cup butter or margarine, melted
1 tablespoon vanilla extract
1 package semi-sweet morsels, melted (optional)
Mix all ingredients but chocolate in a medium sized mixing bowl. Mix well. With your hands shape
into 1 inch balls. If desired dip into melted chocolate. Place on wax paper to dry.
Oatmeal Cookies
3 cups oatmeal, uncooked
1 teaspoon vanilla extract
½ cup sugar
½ cup cocoa powder (optional)
1 cup butter or margarine, softened
¾ cup brown sugar
1 egg
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon, ground
¼ teaspoon nutmeg, ground
1 cup peanut butter chips (optional)
1 cup raisins (optional)
Preheat oven to 375. Mix all ingredients. Drop 1 ½ teaspoonful per cookie spread 2 inches or more
apart. Bake for 10-12 minutes. Remove from pan and let cool on a rack.
To make bars, press into a 13” x 9” greased pan and bake 30-35 minutes.
Chocolate Chip Cookies
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter or margarine, softened
¾ cup sugar
¾ cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups semi-sweet chocolate chips
1 cup chopped pecans or walnuts (optional)
Preheat oven to 375. Mix all but the chips and nuts until well blended. Mix in the chips and nuts.
Drop 1 ½ teaspoonful per cookie spread 2 inches or more apart. Bake for 9-11 minutes. Remove
from pan and let cool on a rack.
To make bars, press into a 13” x 9” greased pan and bake 25-30 minutes.
