15. Marsala Marsala is a sweet fortified wine like sherry. Must is plastered with calcium sulphate with vino cotto a dark colored evaporated must. Fortified with brandy it is the way to mature marsala that is exposed to sunlight in casks during the day time and left in the cold during the night time for 2 to 5 years. It has a unique flavour and brown colour. It was originated by john woodhouse in 1773.
