• Take charge of the operation when the restaurantmanager is on leave.
• Under control of sushi section offish remain fresh and good quality.
• Controlling the proper preparation with proper presentation under perfect texture of all seafood
items.

Duties and Responsibilities
• Looking after the A La Carte Menus of Japanese Sushi and Sashimi.
• Looking forwardlyto the preparation and presentation ofevery item under my section.
• Under control of sushi section offish remain fresh and good quality.
• Stand in front of the sushi section to prepare menus in our cuisine.
• Look after the Mes En Place of my section whether everything is fresh and good quality.
• Controlling the proper preparation with proper presentation under perfect texture of all seafood
items.

• Responsible for overall operation of the seafood restaurant kitchen of the hotel.
• Ensure the quality of the Mes En Place.
• Responsible on preparation, finalization and requisition of market list for all kitchen items.
• Ensure the kitchen is properly manned; conduct necessary training for the staff and
responsible of preparing monthly inventory.

• Trainer skill, AC Murooj Rotana, Food and Safety Management System, Food and Safety HACCP
