Quality Control Executive , Shift Incharge and Lab Manager
100% export oriented Fruit and Vegetables processing company, implemented HACCP system based
on IFS, SQF 2000 and Dutch HACCP standard. IAP exports products to Europe, US, Canada, Australia, Russia
and China in 20ft dry shipping containers. IAP produces 3 categories of acidified vegetables distinguished from
each other by the extent and manner of processing.
1. Fresh Pack Vegetables in Jars and Pouches – Ready to eat product
Purchase of fresh vegetables (gherkins, tomatoes and jalapenos), grading, dry culling, washing, wet
culling, packing in glass jars / pouches, metal detection, media filling (mixture of calculated amount of either
vinegar or acetic acid, water, salt, sugar, calcium chloride, riboflavin, yellow#5 and natural flavours), capping /
sealing with metal lug cap, coding, dud detection, pasteurisation, drying jars, labelling, case packing, case
sealing, palletisation, container loading and transport of finished goods to port.
2. Fresh Pack Vegetables in Drums - Temporarily preserved in strong acid and salt solution.
Requires further processing before consumption
Purchase of fresh vegetables (gherkins and jalapenos), grading, dry culling, washing, wet culling, packing
in 240/260lit HDPE drum, media filling (mixture of calculated amount of either vinegar or acetic acid, water,
salt, calcium chloride and potassium metabisulphite), closing drum, stabilization, topping, buyer/self
inspection, drum sealing, labeling, container loading and transport of finished goods to port.
3. Fermented Vegetables in Drums - Temporarily preserved in strong salt solution. Requires further
processing before consumption
Purchase of fresh vegetables (gherkins), grading, dry culling, packing in 240/260lit HDPE drum, media
filling (mixture of calculated amount of salt, water and calcium chloride), fermentation, culling of fermented
gherkins, packing in 240/260 HDPE drum, mother brine filling, closing drum, buyer/self inspection, drum
sealing, labeling, container loading and transport of finished goods to port.

ROLES & RESPONSIBILITIES
 Inspection of product in various companies and approval for shipment for containers offered on IUT basis.
 Interaction with customers to understand their expectation and offer products in bulk accordingly
 Continuous monitoring of wastage on raw material, packaging material and finished product. Initiate
suitable preventive action then and there to bring down the waste %.
 Monitoring and control of production, quality control and maintenance team for effective operation of plant
in shift.
 Monitoring hourly and daily line output of machineries, man power and take suitable action then and there
for further improvement.
 Monitoring of stock rotation – first in first out or first expired first out.
 Coordination with general maintenance team for various jobs that are taken up.
 Production planning and Control of excess production.
 Plan the various process activities and advise respective area supervisors to allocate job to labour
accordingly.
 Producing quality product with the concept on reduction of rework and wastage
 Monitoring of daily cleaning of machineries, food contact and non food contact surfaces.
 Monitoring of effective utilization of space in the finished product storage room.
 Pre shipment certification, co-ordination with logistics to load and export finished products as per the
shipping schedule.
 Train various levels of employees and created awareness on Food Safety and Quality Plan, GMP, SSOP and
Material Specification
 To strictly adhere to the SOP and ensure safety of the plant.
 To keep the environmental clean by taking necessary steps during operations.
 To ensure cleanliness and safety as a culture amongst all the operatives and labours.
 Implementation of the HACCP based Food Safety Management System, Halal, Kosher and corporate social
responsibility standards in the food facility.
