5. SUSTAINABLE RESORT
CARIBBEAN
Working with renowned architect Lee Stone,
we were asked by a Caribbean developer to
consider resort sustainability from a fresh angle.
This client wants to break from predictable
colonial mansions to an exciting but practical
hotel which incorporates the best in
sustainability and energy efficiency, aimed at
LEED Platinum compliance standards.
We explored the modern organic form and
devised a system of environmentally and
financially efficient modular techniques to create
a resort that breaks the mold of stereotypical
design using fluid and dynamic sculptural forms
creating unique indoor and outdoor spaces.
To maximize environmental efficiency the
structures are designed to capture rain water
and utilize latest photovoltaic and solar-thermal
technology in combination with ground source
heat pumps and geothermal systems..
7. CIPRIANI
YAS ISLAND, ABU DHABI
Cipriani, Yas Island, is one of the world’s largest
dining and entertainment complexes. It
comprises a Cipriani restaurant, Yotto Japanese
restaurant, Allure exclusive nightclub, Cipriani
Cigar Lounge, the exclusive and private Yas
Marina Yacht Club, and private dining rooms.
Wilkings Hospitality provided a fast-track
turnkey solution to design, build and equip the
entire complex. The multi-facet project
required daily coordination with concept
designers in Italy and Thailand, architects in
Dubai, owners and regulators in Abu Dhabi, and
Cipriani in London and New York. It opened
successfully on time and under budget.
12. ALLURE BY CIPRIANI
YAS ISLAND, ABU DHABI
Allure by Cipriani on Yas Island is Cipriani’s first
exclusive nightclub operation, with capacity for
700 people, stunning interior design and huge
terraces overlooking the Super Yachts in the
incredible Yas Marina.
14. BOUTIQUE MANSION HOTEL
HOLLYWOOD, USA
Lee Stone is one of Wilkings Hospitality’s closest
design associates and created this amazing
boutique mansion hotel for Hollywood, California.
Designed for living, entertaining, impressing and
relaxing, the mansion incorporates every latest
sustainable design feature to maximize energy
efficiency and minimize the carbon footprint.
17. HED KANDI RESORT
DUBAI, UAE
Hed Kandi is a music, fashion and lifestyle
brand from London. The first Hed Kandi
hotel is planned for Dubai’s iconic Palm
Jumeirah. Wilkings Hospitality conceived a
high-style contemporary hotel with energy
and excitement, reflecting the aspirational
attributes of the Hed Kandi brand.
This 200 room beachfront boutique lifestyle
hotel includes a Kandi Spa, Hed Kandi Club
and Kandi poolside chill-out lounge.
20. VOGUE CLUB
DUBAI, UAE
Wilkings Hospitality acted as lead consultant in
creating of the design and operating concept
for the proposed Vogue Club in Dubai.
We developed the design, the operational
planning and the financial analysis for a 1,600
square metre high-glamor Vogue-branded
dining and entertainment destination at the
world-famous Meydan Hotel, coordinating at all
times with Vogue head office.
23. OLYMPIC GAMES
LOS ANGELES, USA
At the Los Angeles Olympic Games the UCLA
campus at Westwood was home to the athletes
village and the food service and retail services
for the general public.
Wilkings Hospitality provided an ultra fast-track
turnkey solution to plan, design and install the
2,500 square metre “Foods of the World”
pavilion and the 2,000 square metre retail
souvenir shop.
After the closing ceremonies it was our duty to
restore the original campus topography with
every hill and every tree returned to its original
contour and position, in five days.
The contract was completed on time and
budget with minimal disruption to normal
campus activities.

24. SPORTS MARINE CLUB
ABU DHABI, UAE
Wilkings Hospitality was commissioned to
develop the master plan and detailed financial
analysis for the redevelopment of the Abu
Dhabi Sports Marine Club, home of the Abu
Dhabi Formula One boat racing team. The club
owns eight hectares of prime waterfront land,
on which we planned specialty retail areas,
family restaurants, a new members’ clubhouse
and a Formula One Boat Racing museum.
26. EXTREME SPORTS TOURISM
KYOTO, JAPAN
Wilkings Hospitality has been engaged by the
Kyoto Prefecture Government, through the
Kyoto Development Research Institute, to
analyse current tourism trends in Kyoto and to
recommend ways to extend the global growth in
sports tourism, especially extreme sports
tourism, to Kyoto.
Kyoto wants to attract a younger demographic
to the region and we are now making a
comprehensive study of the region’s facilities,
comparisons with other world cities who have
adopted similar strategies, the financial
implications, and the economic and social
benefits.
28. IT'SUGAR
DUBAI, UAE
Dubai’s Mall of the Emirates owner, Majid Al
Futtaim, asked Wilkings Hospitality to identify
and introduce an iconic American candy brand
for their malls. It’Sugar stands head and
shoulders above the competition, so we
helped negotiate an exclusive license for
multiple It’Sugar candy stores across the
Middle East.
The first site opened in Mall of the Emirates in
2011 and achieved immediate popularity with
local residents and Dubai’s millions of visitors.
29. OSAKA LIVE!
OSAKA, JAPAN
The esteemed architect Tadao Ando is a living
legend in Japan. A genius on a par with
Niemeyer and Gehry, Ando has designed some
of Japan’s most spiritual and enduring
structures. The city of Osaka required a new
use for Tadao Ando’s iconic waterfront
building, known as the Suntory Museum.
Wilkings Hospitality reimagined the building as
a centre for live performance, restaurants,
rooftop bar, and a music and dance academy
conceived in association with the Osaka Kyoiku
University.
30. MORE CAFÉ
MUSCAT, OMAN
More Café, originally from Dubai, is famous for
superb food, relaxing environment, funky
design and great value. More Café asked
Wilkings Hospitality to develop a regional
franchise program which led to the first
franchise with a highly respected and proven
operator in a prime location in Muscat, Oman.
More Café Muscat opened in November 2012
to instant success, laying the foundation for
further expansion throughout the Gulf region.
32. COMMISCEO BEACH CLUB
ABU DHABI, UAE
The Fairmont Hotel at Bab Al Bahr, Abu Dhabi,
has breathtaking views over the Grand Mosque
and the natural beaches that demark Abu
Dhabi island.
An adjacent three-story villa on Fairmont’s
property has the same views. Wilkings
Hospitality was commissioned to envision a
Latin themed restaurant and beach club to
bring life and pizzazz to the Bab Al Bahr district.
We created the Commisceo brand exclusively
for Fairmont Hotels, using vibrant colours,
traditional furnishings and energetic lifestyle.
36. GINJIRO RESTAURANT
TOKYO, JAPAN
Wilkings Hospitality knows Japan well and
since 1987 has accumulated volumes of
development and operating experience, and
general business knowledge of Japanese ways.
We have collaborated on many hospitality
projects in all the major cities. Our Tokyobased design partners, Age Co. Ltd, designed
and produced the beautiful Ginjiro restaurant.
37. BONGO’S CUBAN CAFÉ
MIAMI, USA
Gloria Estefan and husband Emilio established
their own high-energy live entertainment and
restaurant concept called Bongo’s Cuban Café.
Wilkings Hospitality worked with David Rockwell,
lead designer, to manage project development
and to ensure the project was completed on
time and on budget, while maintaining the
integrity of the Rockwell design.
38. HONYAKI SUSHI HOUSE
DUBAI, UAE
Wilkings Hospitality was hired by Jumeirah
Group to conceive and develop from scratch a
new Japanese restaurant concept for a prime
location at Dubai’s premier resort, Souk
Madinat Jumeirah.
We acted as producer for all facets of the new
concept. The name, brand identity, interior
design, table top settings, uniforms, menu
design and turnkey interior fit-out were
provided by Wilkings Hospitality on a fixed time
and budget basis.
42. BARBACOA CHURRASCARIA
DUBAI, UAE
Barbacoa Churrascaria is one of Brazil’s finest
churrasco restaurants. Renowned for its top
quality meat, service and meticulous food
preparation, and the warm, inviting interior
which celebrates Brazil’s zest for life and love of
barbequed meats.
Wilkings Hospitality was chosen to support
Barbacoa’s licensee in Dubai for site selection,
development and operating budgets, lease
negotiations and feasibiity analysis.
43. STARS’N’BARS
YAS ISLAND, ABU DHABI
Wilkings Hospitality delivered an inclusive
turnkey design/build solution for the first
Stars’n’Bars Sports Bar and Grill franchise on
world-renowned Yas Island in Abu Dhabi.
We re-imagined the original Stars’n’Bars
concept from Monaco, and created a
franchisable formula for an international rollout, without losing any of the original
Stars’n’Bars excitement and magic.
45. ALPENROCK HOUSE
WHISTLER, BC
Alpenrock House is a highly successful Swiss
concept which offers the authenticity of a Swiss
mountain village in a theatrical environment,
with a high-quality casual restaurant, bars, live
and DJ entertainment at night and activities for
the whole family during the day.
Wilkings Hospitality modified the original Zurich
concept for development in Canada, retaining
the original Swiss mountain village theme.
47. JULIANA’S TOKYO
TOKYO, JAPAN
Juliana’s Tokyo is one of the most successful
nightclubs in nightclub history. Located in the
warehouse district of Shibaura, Juliana’s Tokyo
quickly developed into a musical phenomenon.
Juliana’s hosted over 1,000 clubbers 7 days a
week, returned its investment in 6 months, and
was the first nightclub ever to publish CDs
under its own brand name.
The Wilkings Hospitality team was responsible
for the original concept, brand, complete
interior design and audio-visual specifications.
We also managed the day to day operations,
music policy and marketing strategy.
49. MINISTRY OF SOUND
LAS VEGAS, USA
The Wilkings Hospitality team developed the
operating and design concepts for the proposed
Ministry of Sound nightclub and day club in Las
Vegas, originally to be located at the
Cosmopolitan hotel on Las Vegas Boulevard.
51. SCIENCE DISCOVERY CENTRE
DOHA, QATAR
Katara, a mixed use waterfront development
sponsored by the government of Qatar,
commissioned Wilkings Hospitality to imagine a
new Science Discovery Centre, focused on the
digital sciences and new media technology, in
combination with the traditional STEM sciences.
We established a world-wide research program
to determine the state of the art in digital
science and science discovery centre design and
best practices.
From this research we developed an operating
philosophy and design methodology for a new
era science technology discovery centre, to be
developed on Doha’s expansive waterfront.
