2. What is Gluten?
• Gliadin is a substance found in some grains that triggers an
immune response in sensitive individuals. Gluten is a
misnomer, the proper name is Gliadin. Genetics/Injury/Illness all
play a part in sensitivity.
• Until now testing for gluten intolerance has only been against
one of those components, alpha gliadin. Testing in the past has
only been 30% accurate.
• It also has been discovered wheat is made up of more than 100
different components that can cause a reaction, not just one.

3. Why A Gluten Free Lifestyle?
• Genetics: HLA DQ 2/8 genes are often found in
celiacs and non celiacs alike. The presence of
the gene does not guarantee gluten intolerance
• Injury: Injury to the gut lining from
drugs, antibiotics, infection, poor diet can lead
to gluten intolerance following gut
permeability
• Illness: The gut lining will be compromised at
times, tearing down the normal barrier to the
blood stream. Gluten intolerance can ensue
when the immunes system attacks large
molecules of unprocessed foods.

4. How Do I Know if I am Intolerant?

5. How Bad Can It Be?
• Opioid testing
• Some people have enzymes in their digestive tract
that break gluten down into opioids that act like
heroin or morphine. Embarking on a gluten-free diet
can cause terrible withdrawal symptoms in these
people. One practitioner tells of a patient whose
withdrawal symptoms were so severe she went to the
emergency room.
