• Provides a direct measure of yeast activity:
  – During propagation & fermentation
• The YAM measures only viable (vs live/dead) cells
• The YAM also measures cell vitality
  – Metabolic rate (Old person vs young person)
• The YAM data correlates accurately to real ethanol
  production
• The YAM is capable of running up to four samples
  at the same time in one piece of equipment
  – Vs one cell count per microscope
