       By the time agave is ready to be harvested,
       it has been lovingly aged eight to 10 years
 in the rich soil of the Highlands or Lowlands of
 Jalisco,or any of the other four states designa-
 ted by tequila’s Denomination of Origin.
    Once the pencas (leaves) have been removed
 by the jimador (harvester), they are brought to
 the distillery to be cooked in stone ovens or
 steam autoclaves. Whether shredded or stone
