Introduction
Colombian is a country plenty of typical food and drink, and those differ according to the
region they belong to. For example, in the Caribbean region, the favorite food is fried fish
because of the location and the climate in there; in the Amazonia region, population is used
to eatthings like “sancocho de hueso” and so forth. Because of that, to recognize the main
dishes prepared for those men and women is an admirable labor.
Now, our work here is done to take into account the principal food that is made in the
Andean Region, especially in Armenia: the famous “Arepa Paisa”. Here in Florencia you
can see a lot of familiar businesses that prepare those dishes, and even international food. In
our case, we are going to visit one local business that is located in “Las Américas”
Neighborhood, in the Centenarian Avenue.
This is a beautiful process, where a family do their best to prepare those food, and they
consider they have been well received since the first moment they started to do arepas. 18
years ago, it means in 1994, they have succeeded since then, and doing the arepas with their
secret ingredient in their recipe.
We had the chance of find out how they do these arepas and what the ingredients are when
doing them. Oh! We’ve forgotten they have the secret ingredient, which has been the one
that make succeed this family.
We hope you like this work, and do your best, because we everyday do our best!
Product: Arepa Paisa
The arepa paisa is a fast food, typical from Armenia-Quindío, and this is characterized
because for being toasted, well roasted and made of white corn. What makes special this
food, is that when you cook them, the take a golden color, making them irresistible from all
the public and clients that want one arepa to eat on weekends and weekdays at night. You
can prove these arepas when you cherish to take out your couple on a date to eat arepa
paisa, or when your family want to share special moments, they just go to eat these
products.
They are made with the next ingredients:
White corn threshing
Onions
Tomatoes
Condiments
Beef
Chicken
Sausage
Chicharron
Quail eggs
Butter
Salt
Pink sauce
Mayonnaise
Tomato sauce
Tartar sauce
Honey
Double cream cheese
Grated cheese
Secret ingredient
Cooking oil
All the ingredients mentioned here, are the ones that you need to do the arepa paisa.
Process of the arepa paisa
This is the recipe:
1. Cook the White corn on a simmered way with a lot of water. As soon as the corn is
cooked, take out the remaining water, and you proceed to thresh. After that, try to
do knead and arm the arepas with the same measure and the same weight.
2. Roast the arepas in one big pre-fabricated oven
As soon as you finish doing the arepas, you proceed to do the filling of those arepas.
3. Liquate the tomato and the onions and mix them with the condiments. Then, fry the
mix with cooking oil on a simmered way.
4. Cook the beef and the chicken with salt independently one another. As soon as they
are cooked, chop them and bath them with the secret ingredient.
5. Fry the beef and chicken to add later in the arepa paisa.
6. Crush the cheeses and leave them ready in containers.
7. Take the quail eggs, cook them, and peel them to leave the eggs ready in containers.
8. Fry the sausages and the chicharrones independently one another, and chop them to
add these to the arepa paisa.
When everything is ready:
9. Open the arepa in a half and introduce all the ingredients ready. You can
accompany the arepa with the sauces and honey.
Production
The local business is called “Arepas la 22”, and they work every day nonstop from
4:00 p.m. to 1:00 a.m. They are used to sell from 400 to 600 arepas a day. They are
recognized in all Florencia city. Remember that they just do the arepa paisa and
nowadays they are trying to offer churrasco while they succeed with the current
business.
They start working at 4:00 p.m. because they prepare all the ingredients for the
arepas. They start offering the arepas at 5:00 p.m. when everything is ready for the
clients who visit that place. There are 23 tables available, for serving to all the
guests, and the only thing the employees do is to fill the arepa with all the
ingredients.
We can assure, they spend a lot of money in getting the ingredients, and they spend
a lot of time doing their best, and spend their energies to serve the clients as well.
Conclusions
Fast food is an increasing business in our city.
We have to promote the regional economy.
We can know the actual situation of employers when having an enterprise.
We ate arepa paisa
