Where do curries come from?
The word 'curry' itself comes from the Tamil: literally meaning 'gravy'. So the origins of
the word are from Southern India. The British brought curries to the West. However, these
days the term 'curry' is used for any dish or meat cooked in a spicy or hot sauce or gravy.
Curries are known from Africa, India, South-east Asia and the Pacific islands.
What kind of curries are there?
Madras
Madras curry is a spicy curry which originates in the South of India. This curry can
accompany vegetables or meats, and it can feature a wide range of ingredients
The curry is named for the city of Madras, now known as Chennai. The heat of
Southern India is ideal for growing chilli peppers

Balti
Is a British-style type of curry cooked and served up in a type of
wok made of cast iron. It is served in many restaurants in the
United Kingdom. The style of food is thought to originate from the
Pakistani region of Baltistan in Kashmir, from where it was brought
by South Asian immigrants to Britain
One school of thought states that name 'Balti' for food may reflect
the fact that an ethnic group living in that area of north Pakistan
are called Balti. Balti food is named after the pot in which it is
cooked

Rogan josh
Is an aromatic curry dish hailing from Kashmir and is quite
popular in India, Pakistan, Singapore and the United Kingdom.
Rogan means ( oil in Pershian ) while josh means heat, hot,
boiling. Rogan josh thus means cooked in oil at intense heat
Korma
is a dish originating in Central Asia or Western Asia which can
be made with yoghurt, cream, nut and seed pastes or coconut
milk; it is usually considered a type of curry Both vegetarian
and non-vegetarian kormas exist.
