Three Vegetarian Polenta Recipes Even Your Kids Will Eat!
Polen ta is the most versatile food, and almost everyone likes the taste of
it. Made creamy or grilled, this cornmeal based dish can be served as a breakfast, lunch or
dinner. Here are some inventive ways to use polenta that the entire family can enjoy today.Â
Make instant polenta if you prefer a creamy consistency and you are a busy mom like me who likes
to keep things simple in the kitchen. You can also make homemade polenta if you like; it
isnâEUR(TM)t overly complicated. You simply boil cornmeal in water and add salt and butter.Â
You need six cups of boiling water per 1-3/4 cups of cornmeal. Another option is to buy polenta
already formed into a roll. The texture is firmer, and this is a great option for grilling and baking.
Polenta with Eggs and Tomatoes âEUR" Since I am not married to the idea that eggs should be
confined to the hours preceding noon, I think this dish works great as a dinner as well as a brunch.Â
For this recipe, I opt for firm polenta slices, and layer them across the bottom of a baking dish
coated with olive oil. Next I add a can of crushed tomatoes, and then I break eggs over the top of
the tomatoes and polenta. IâEUR(TM)ll use two eggs per adult and one per child typically. Bake
the dish in a 350 degree oven for about 20 minutes, or until eggs are baked through but not
rubbery. Variations to this dish IâEUR(TM)ve tried include adding chopped onions, and either
shredded cheddar cheese or crumbled goat cheese. Even my one year old will eat this meal!
Creamy Polenta with Peas and Carrots âEUR" This dish is as simple as it sounds. You simply cook
creamy polenta, and then add cooked peas and either sliced or shredded carrots. This works best
as a side dish, but my kids will eat it as a dinner, in which case they are getting their veggies so
IâEUR(TM)m happy!
Polenta With Roasted Vegetables âEUR" Sometimes I make this meal when I am running out of food
in the house or when I canâEUR(TM)t think of a single thing to make for dinner. All you need to do
is slice up firm polenta and bake it right along with cut up veggies, drizzle with olive oil, sprinkle
with salt and pepper and bake in a 400 degree oven for about 40
minutes. Vegetables that complement polenta are carrots, onions, zucchini, peppers, just about
anything.Â
