La segunda edición de la Feria Gastronómica Internacional de Lima, Mistura, fue un éxito con más de 100,000 visitantes. La feria contó con la participación de productores agropecuarios de 13 regiones del Perú y chefs internacionales. Además, ofreció clases magistrales para estudiantes de cocina y platillos populares de vendedores ambulantes. Aunque la feria superó en tamaño a la edición anterior, aún no pudo satisfacer la gran demanda del público.

mediática que alcanzó Mistura, son, sin duda, motivos para celebrar.
Peromásalláderéditosfinancierosquebuscanlamayoríadeferias,Mistura
apuestaapromoverlagastronomíaperuanacomomotordedesarrolloen
el frente interno y posicionar la marca Cocina Peruana en el exterior. Para
ello, alentamos una amplia alianza público-privada y un acuerdo entre el
sector sin fines de lucro y el estrato empresarial.
El liderazgo y trabajo de organización básico de la feria lo realizaron los
asociados de la Sociedad Peruana de Gastronomía (Apega) quienes
trabajaron de una forma intensa y ad honorem. También se contó con el
apoyo de universidades y de los institutos de formación en cocina que
dispusieron brigadas de estudiantes y docentes para apoyar en las clases
de cocina, mesas redondas, viandas populares y en el stand de Apega.
Aellossesumóelimportanteauspiciodeungrupodeempresasqueapoyó
con dinero o con servicios. Por ejemplo, Franca y el Banco Continental,
Ransa,IncaKola,LanySodexo,entreotras.Porsuparte,PromPerúauspició
la feria e invitó a una importante delegación de periodistas extranjeros. El
Ministerio de la Producción montó un túnel de la biodiversidad marina, y
otros ministerios exhibieron nuestros insumos agropecuarios y productos
bandera como el pisco.
NopodemosdejardemencionarladecisivacolaboracióndelaConvención
Nacional del Agro (Conveagro), la Asociación Nacional de Productores
Ecológicos (ANPE) y redes ecológicas para la implementación del Gran
Mercado. Además, contamos con los gobiernos regionales que ayudaron
con el trasporte de sus productores y sus insumos a la feria.
Que duda cabe que Mistura ha permitido poner nuestra comida en boca
de todo el mundo. Y en eso andamos… y seguiremos. Que disfruten esta
memoria. Mientras tanto nosotros en Apega ya andamos cocinando la
organización de Mistura 2010.

La segunda versión de la Feria
Gastronómica Internacional de Lima,
Mistura, fue un éxito por donde se le
mire. Quizá lo más importante es que la
feria fue un asunto de todos. En las colas
de ingreso alternaba gente de todos
los barrios de Lima, sectores sociales
y edades. Los platillos populares de
las vivanderas de la calle y los potajes
rurales tradicionales competían en
buena lid con connotados restaurantes
de Lima y regiones.
Productores agropecuarios de las más
diversas regiones del país ofertaban
sus singulares productos, la cultura
brotaba por doquier (cine, mesas
redondas, exposiciones fotográficas,
libros, música, etc), y ávidos
estudiantes de cocina y apasionados
sibaritas escuchaban las clases
magistrales de los mejores cocineros
internacionales y nacionales. Todo
esto se expresó en la resonancia
mediática que alcanzó Mistura.
Una vez más, la feria se quedó corta
frente a la tremenda expectativa de la
gente. Mistura ocupó esta vez 110 mil
metros cuadrados, una superficie cinco
veces mayor a la feria de 2008. Esto
permitióquerecibiéramosaunoscienmil
visitantes, pero lamentando que algunos
miles se quedaran sin poder entrar. Y
es que el entusiasmo que tenemos los
peruanos por la comida es muy grande;
The second Lima International
Gastronomy Fair, Mistura, was a
successful from every angle. Perhaps
the most important feature was that
the fair was something for everyone.
The queues to enter the fair were a
mix of people from every part of Lima,
every age and every social group.
The popular dishes served by street
vendors and the traditional country
stews competed evenly with the well-
known Lima and regional restaurants.
Farm producers from the most
diverse areas of the country offered
their unique products, there were
cultural activities everywhere
(cinema, discussions, photographic
exhibitions, books, music), and avid
culinary students and passionate
sybarites listened to master classes
given by the best cooks, both local and
from abroad. And Mistura’s success
resonated in the press coverage it
received.
Once again the fair was unable to meet
the huge demand of the public. The
fair grounds occupied 110,000 square
meters, an area five times larger than
the fair in 2008. We were able to
welcome around 100,000 visitors, but
there were still several thousand who
had to be turned away. The reason, of
course, is that Peruvians are great food
enthusiasts and, unfortunately, Lima
does not yet have fair grounds that can match the Pacific Fair grounds
that existed years ago.
The more than 100,000 visitors, the producers from 13 regions, the
participation of international chefs, the thousands of culinary students
who enjoyed the free master classes, and the resounding coverage of
the event are cause for celebration.
But beyond the financial interest that most fairs seek, Mistura’s aim is
to promote Peruvian gastronomy as a driving force in development
domestically and to position the Peruvian Cuisine brand abroad. To
do this, we encourage a broad alliance between the public and private
sectors and an agreement between business and non-profit institutions.
The leadership and basic organization of the fair were carried out
by the members of the Peruvian Gastronomy Society (Apega), who
worked intensely and pro bono. The fair also received the support of
universities and cooking schools, which provided brigades of students
and teachers to support the cooking lessons, discussions, popular
dishes and the Apega stand.
Added to this was the important sponsorship, in cash and in kind, of a
group of companies that included Franca and the Banco Continental,
Ransa, Inca Kola, Lan and Sodexo. PromPeru also sponsored the fair
and organized the invitation of an important delegation of foreign
journalists. The Ministry of Production mounted a tunnel of marine
biodiversity, and other government ministries exhibited Peruvian
agricultural inputs and flag products such as pisco.
We also to need to mention the decisive collaboration of the National
AgriculturalConvention(Conveagro),theNationalAssociationofFarmers
(ANPE) and ecological networks in the implementation of the Grand
Marketplace. We also received the support of regional governments, who
providedthetransportforproduceandfarmersfromtheirareastothefair.
There is no doubt that Mistura has helped to position our cuisine on
the world’s palate. And that is what we’re doing….and will continue to
do. Enjoy this report. And in the meantime, we at Apega are already

Apega deseba conocer cuál el era la importancia del sector
gastronómico en el país, por ello encargó a Arellano Marketing un
estudio basado en los siguientes objetivos:
• Analizar integralmente las relaciones económicas y sociales de
los diversos actores de la industria de la alimentación en el Perú.
• Dimensionar de manera referencial el tamaño de las diversas
actividades ligadas a la gastronomía en el Perú, como, por
ejemplo, el movimiento de productos alimenticios, hoteles,
restaurantes y empleos que se generan, entre otros.
• Dar una apreciación general sobre la importancia de la
gastronomía y la alimentación en el Perú, como factor de
desarrollo actual y potencial.

The stars of the fair arrived on public transport, from the
street corners of Lima and the provinces. The best kebabs,
sandwiches, fried picarones, and also the most commented
cebiches, juanes from the jungle and highland pork and
peanut stews were served to the public from street carts. It
was this feature that endorsed the multi-faceted character of
Mistura, which seeks to recognize the flavors that flirt among
sidewalksorinunpretentiousrestaurants. Thissection,infact,
meant that 69 of the best street cooks and representatives of
traditionalcuisineparticipatedfreeofcharge.
Las estrellas de la feria llegaron en combi desde las esquinas
de Lima y provincias. Los mejores anticuchos, sánguches,
picarones, pero también los cebiches, juanes y carapulcras
más mentadas estuvieron a merced del público en las
carretillas. Esta presencia rubricó el carácter plural de Mistura,
que busca reconocer el sabor que flirtea sobre veredas o
en restaurantes sin pompa. Sí, esta sección permitió que
69 de las mejores vianderas y representantes de la cocina
tradicional participaran sin pago alguno.

La tía Grimanesa, por ejemplo, preparó 11 mil anticuchos, Pochita
cocinó 7 mil 500 pancitas, El Chinito sirvió 5 mil sánguches, Mavery
colocó en la boca cerca de 4 mil empanadas y Curich enfrió los ánimos
con 2 mil 500 cremoladas. Por su parte, ElVerídico de Fidel derritió 8 mil
paladares con su leche de tigre, Tucunare de Amazonas envolvió 2 mil
500 juanes, El Brujo de Tumbes sirvió 2 mil 500 porciones de ostiones;
en tanto que Claudio, el emolientero de Surco, llenó 8 mil vasos, y
CarmenVillar endulzó con 3 mil porciones de sus tradicionales postres.
También participaron: Pancho y Cola, Yakitori, Magaly Silva, las
humitas de La Chinchana y Surco, Tamalitos Verdes Piuranos y
juanes de Andy Diaz, El Huarique del Sabor, Mi Perú, El Tío Candela,
Las Julitas, Doña Mary, La Granja de San Miguel, El Peruanito, Refilo,
La Poblanita y Sarita. Asimismo, La Gran Fruta, Las Delicias, Carlos
Lazo, Helados Ovni, Sarcleti, Anelare, y Cremoladas Angélica.
También los emolientes de Oscar, Mauro, Isaac, Villegas y Siete
Mezclas. Los dulces de Bocaditos Tradicionales, Dulces Tradicionales
Limeños, Don Freddy, Anita, Luis Quispe, Orlando Velarde, Maga,
Mis Suspiros, Sanguito, Humai, Picarones Lina, Claribel, Tina Reyes,
Dulce Tradición Rica Melcocha y las yuquitas de Balconcillo.
El complemento lo puso Queirolo, los pasteles de la Agraria, los
carritos chocleros de Agrorural, La Patarashka de Tarapoto, La Chayo
dePiura,ElRefugiodeMamainédeChincha,ElMalMandadodePiura,
Anticuchos Trujillanos, Queso Helado Arequipeño y la Red Gastro del
Cusco.
Aunt Grimanesa, for example, prepared 11,000 anticucho kebabs,

Denominado oficialmente como “Cocinas Rústicas”, este fue
un espacio diseñado para albergar a todas aquellas cocinas
típicamente campestres. Aquí se pudo disfrutar peculiares platos
como el chancho al palo, la histórica pachamanca y los rollizos
lechones en caja china.
Under the official name of “Rustic Cuisines” this space was
designed to house all the typical countryside cuisines of Peru.
This space offered strange and tasty dishes such as rack of pork
on a stick, the historical pachamanca or underground ‘barbecue’
and fat suckling pigs cooked in a Chinese roasting box.

Pero si la primera edición tuvo sólo dos representantes,
la segunda versión amplió la casa y fueron cinco los
invitados a desempacar sus delicias al fogón: Chancho al
palo del Rancho de Robertín de Huaral, la pachamanca
del maestro Jesús Gutarra, la caja china de Juan Talledo,
y el cilindro mágico de Pedro Pérez fueron los caporales
de la cocina a la brasa.
El respaldo del público no se dejó esperar y las colas
estuvieron presentes los cuatro días de feria en estos
espacios que podían ser ubicados fácilmente desde
cualquier punto del Parque de la Exposición. Bastaba
alzar la mirada y seguir el humo de sus fogones. Si había
que esperar 45 minutos por uno de estos platos, pues el
tiempo era lo de menos si al final se podía literalmente
“limpiar” estos platos por los que, por ejemplo, hay que
viajar hasta el norte chico.
There were only two of these specialty cooks at the
first fair, but five were invited to the second event to
unpack their delicacies on the hearth: roast pork from
the Rancho de Robertín in Huaral, the pachamanca by
master Jesús Gutarra, Juan Talledo’s Chinese box, and
Pedro Pérez and his magic cylinder were the chiefs of the
grilled cuisine.
The public’s enthusiasm was expected and during the
four days of the fair, people lined up at these spaces,
easilyseenfromanypointattheParquedelaExposición.
One just had to look up and follow the fine plumes of
smoke. Waiting 45 minutes for one of these dishes was
unimportant if at the end one could literally clean off the
plate for which, ordinarily, one would have to travel far
to find.

No tienen clientes, sino feligreses. No usan letreros ni sacan avisos en
los periódicos o revistas gastronómicas. Por el contrario, son reductos
austeros donde el único lujo que hay se sirve en los platos. Sus cocineros

They don`t have customer, just a congregation. They don`t use signs
and don`t make publicity in newspapers o cooking magazines. On the
contrary, are simple spaces where the only luxury is that the food is served
in dishes. Their cookers are truly guardians of the tradition and keepers of
the authentic flavor.

They don’t need to be in the yellow pages nor hang huge signs
on their doors to always be packed. These are the pearls of the
gastronomy boom. These are, no more and no less, the restaurants
where exquisite seasoning, quality ingredients, a respect for what is
Peruvian, and a defense of tradition have created spaces that do not
use the word restaurant.
This led to the decision in the second fair to open the doors to Javier
Wong, to fillet sole and cook his stir-fries in a wok, to Emilio and
Gladys to awaken temptation in their bedeviled black scallops, for
Sonia to anchor her fishing boat once again, to continue a living
legend and show new generations what was served at Rosita Ríos.
The word restaurant just does not describe these strongholds of
happiness. Due to their cooks, they have become transformed into
temples where parishioners turn to proudly enjoy the tastes of Peru.
No necesitan estar en las páginas amarillas ni poner enormes carteles
sobre sus puertas para estar siempre,“de bote a bote”. Se trata de las
perlas del boom gastronómico. Hablamos, ni más ni menos, que de
los restaurantes donde la sazón exquisita, los insumos de calidad, el
respeto por lo nuestro y la defensa de la tradición hacen que estos
espacios hayan desempleado la palabra restaurante.
Y es que así no se les puede llamar más a estos reductos de la
felicidad. Gracias a sus cocineros se ha producido una metamorfosis
y se han convertido en verdaderos templos donde los feligreses
recurren a empacharse de orgullo con el sabor de lo nuestro.
Por eso, la segunda versión de la feria abrió sus puertas para que
Javier Wong fileteara lenguados y cocinara sus saltados al wok, para
que Emilio y Gladys despierten la tentación con sus endemoniadas
conchas negras, para que Sonia ancle otra vez su bote y, cómo no,
para que se mantenga viva una leyenda y las nuevas generaciones
sepan lo que preparaba Rosita Ríos.

Sin ellos nada sería igual. Sin su chamba al pie de un fogón o al ritmo del batán, no
habríamos conocido platos emblemáticos que aprendieron de sus abuelos y que

Fue una verdadera fiesta. Una carpa gigante se levantó para que en
sus faldas recalaran los módulos de 32 restaurantes (el 2008 sólo
fueron 12) que gracias a la selección de Apega, aseguraron una
diversidad para“picar un poco de todo”y bajo un solo techo.

of 32 restaurants could be located at its skirts (there were only 12

Todo estuvo bajo control. Esta vez se dispuso un amplio espacio para que las colas no
interrumpieran a quienes ya degustaban sus platillos en la zona de comida. Además, se
centralizó la venta de tickets (hubo sólo dos precios: 6 y 12 soles) en una suerte de agencia
flotante del Banco Continental.Y para la sed nada mejor que la barra de Franca ubicada al centro
mismo del patio.
Podemos resumir diciendo que los cocineros peruanos pusieron lo suyo no sólo sobre la vajilla,
sino que, agradecidos por el cariño y preferencia de los comensales orgullosos de su gastronomía,

Everything was well organized. There was a large space allocated in the food area so that the
queues of people did not interrupt those who were already enjoying the tastings. Additionally,
the ticket sales (only two prices, 6 and 12 soles) were centered in a Banco Continental branch set
up for the event. And to quench the thirst, nothing better than the Franca beer bar located in the
center of the same courtyard.
We can sum up the experience by saying that Peru’s cooks not only delivered their goods onto
plates but, in appreciation of the preference and enthusiasm of the patrons so proud of their
gastronomy, they made their art accessible to every wallet.

Permitir que centenares de productores agropecuarios y comerciantes de mercados populares hayan
podido traer sus productos a la feria sin pagar un centavo es parte de nuestra misión, y la seguirá
siendo. Al respecto, debemos resaltar que el público respaldó la presencia de los 223 puestos (el
2008 sólo fueron 60). Para prueba basta revisar la siguiente data de venta: ajíes (4 toneladas),
papas nativas (5 toneladas), frutas amazónicas (5 toneladas), productos procesados (8
toneladas), cereales (4 toneladas), otros (7 toneladas). El ticket promedio fue de S/4.5 lo
que nos dio S/148,500 de movimiento de productos manejando un aproximado de 33
toneladas de producto vendidas. ¿Bueno no?
Todos los productos fueron vendidos por los propios productores, venidos
de todo el Perú, a precios que varían en mil por ciento con lo que les pagan
los intermediarios en chacra. Es decir, productos de alta calidad a los que
finalmente el mercado les reconoce el verdadero y justo valor que
tienen, y que seguramente el boom gastronómico ayudará a sacarlos
definitivamente de su actual condición.
Además de las empresas que tuvieron stands dentro del gran
mercado, participaron las siguientes instituciones: Junta Nacional
del Café, Asociación Peruana de Productores de Cacao,
Asociación Nacional de Productores Ecológicos, Incopa,
Agrorural y el Mercado Nº 1 de Surquillo.
Helping hundreds of farmers and popular market traders bring their products to the
fair completely free of charge is part of our mission, and will continue to be so. The
223 stands (there were only 60 in 2008) were well received by the public, and the
proof is in the sales figures: hot peppers (4 tons), native potatoes (5 tons), Amazon
fruits (5 tons), processed products (8 tons), grains (5 tons), and other products (7

for approximately 33 tons of sold products. Not a bad event, is it?
All the products were sold by the producers themselves, who came from all over
Peru, and sold at prices 1000 % higher than what they are paid by middlemen out
in their fields. These were all high quality products that the market is finally giving
their true and fair value, and undoubtedly the gastronomy boom will help these
producers rise definitely above their checked development.
Besides the companies who held stands at the grand market, the following
institutions were also present: National Coffee Board, Peruvian Association of
Cacao Producers, National Association of Organic Producers, Incopa, Agrorural,
and Surquillo Market Nº1.

Many were invited, but few were chosen. The reader cannot imagine the number of
companieswhorequestedacommercialstandatthefair.However,wewereandwill
continue to be very selective in choosing companies that sell quality products, that
prove their social responsibility and that are serious in promoting the culinary arts.

Muchos los llamados, pero pocos los escogidos. Ni se imaginan
la cantidad de empresas que pugnaron por contar con un
stand comercial en la feria. Sin embargo, fuimos y seremos
muy cuidadosos en dar cabida a empresas que comercialicen
productos de calidad, que demuestren responsabilidad social y
que apuesten por la gastronomía.
Su presencia fue y será muy importante en Mistura. Por ejemplo,
una quinta parte de los costos de la edición 2009, fueron
financiadosconlaventadestandsagrandesomedianasempresas.
A ellos nuestro agradecimiento por confiar en esta feria que

Este año los visitantes pudieron conocer las múltiples variedades
de pan que se elaboran en las 24 regiones del país. Pero eso no fue
todo, como bien lo indica su nombre, El Rincón de Panes y Quesos
también exhibió un ramillete de la oferta láctea peruana en quesos.
A cargo de Andrés Ugaz, esta sección recibió la mayor carga de
visitantes de la feria. Se estima que no menos de 60 mil personas
recalaron en sus escaparates, donde un puñado de panaderos
y estudiantes del Instituto Peruano de Gastronomía elaboraron
y regalaron 400 mil panes de 40 variedades. Un crecimiento
exponencial si lo comparamos con los 140 mil panes de 18
variedades que se obsequiaron el 2008.
¿Las vedettes? Hubo algunas variedades de pan que ostentaron ese
galardón, pero la gente se inclinó por ponerle la corona al“Chuta”del
Cusco y al “Tres puntas” de Arequipa, al punto que guardaban cola
esperando que la humeante chimenea anunciara que en la puerta
del horno ya estaba el pan. Los que también llamaron la atención
fueron los panes de Pulque, Xocolátl (pan de muerto), Rosca de
reyes y Conchas. Todos ellos de origen mexicano.
This year the visitors were able to taste and discover a wide array
of breads that are baked in the country’s 24 regions. But that was
not all, of course. The Bread and Cheese Nook displayed a bouquet
of cheeses made in Peru.
OrganizedbyAndrésUgaz,thissectionreceivedthelargestnumber
of fair visitors. An estimated 60,000 people stopped by the displays,
where a few bakers and students from the Peruvian Gastronomy
Institute made and gave away 400,000 breads in 40 different
varieties. The growth is exponential compared to the 2008 fair,
when 140,000 breads in 18 varieties were given out.
The stars of the show? There were several bread varieties that won
that merit, but people were inclined to give the crown to “Chuta”
from Cusco and “Three Corners” from Arequipa, and were willing to
stand in line to wait for the smoking chimney to announce that the
bread was in the oven. Other breads that caught people’s attention
were of Mexican origin – the Pulque, Xocolátl (bread of the dead),
Rosca de Reyes (Magi Ring), and Conchas.

Una de las novedades que trajo este año la feria fue la presentación
de dos exposiciones fotográficas: una dedicada a mostrar que los
mercados siempre estuvieron a nuestro lado, y otra que gracias
a la curaduría de Herman Schwarz nos permitió hacer un viaje al
pasado y ver cómo se comía en la Lima antigua, incluyendo a los
restaurantes y comida callejera popular.
El corazón de las ciudades late en los mercados al ritmo de una
sabrosa cumbia o de un huaynito melancólico. Y es que, desde
siempre, los centros de abasto han marcado el paso de las urbes
y los poblados. En la etapa fundacional de Lima, por ejemplo, la
Plaza Mayor operaba literalmente como un gran mercado abierto
y como centro de expendio de alimentos por antonomasia.
Otras ciudades del Perú, como Chiclayo y Arequipa también
surgieron alrededor del mercado y sus plazas. Por eso, hasta
ahora prevalece la frase“Vamos a hacer la plaza”cuando se quiere
decir vamos al mercado, espacio que siempre ha sido lugar de
encuentro y esparcimiento donde todos somos iguales.
Sin lugar a dudas es un lugar democrático, lleno de sincretismo
cultural. Viejas cofradías y amistades se han tejido a través de los
años entre caseritos y compradores en medio de una increíble
oferta de productos a costos asequibles… y su yapa más.
Pero no sólo es cuestión de fibra. Muchos de nuestros mercados son
verdaderos monumentos arquitectónicos. El mercado de Surquillo,
por ejemplo, fue diseñado por Alfredo Dammert. Otra prueba es el
mercado de Arequipa, obra del maestro francés Gustave Eiffel, o el
Mercado Central Ramón Castilla, el más moderno de su época.
One of the novelties at Mistura 2009 was the space given
for two photographic exhibitions: one dedicated to showing
the markets that have always existed, and another, under
the guidance of curator Herman Schwarz, took viewers on
a journey into the past to see how old Lima dined, including
restaurants as well as popular street stalls.
The heart of a city beats in the markets to the musical
rhythm of a saucy cumbia or a melancholy huayno. Supply
centers have always marked the pace of towns and urban
areas. In Lima’s early days, for example, the main square
was used literally as a great open market and the main food
supply center.
Other cities in Peru, such as Chiclayo or Arequipa, also rose
around their market and squares. Hence the old phrase of
“going to do the plaza” is still used when people want to say
they are going to market, a space that is for meeting and
enjoyment and where everyone is equal.
The market is undoubtedly a very democratic place, full
of cultural syncretism. Old guilds and friendships have
been woven over years between stall owners and buyers,
in the middle of an incredible assortment of products at
reasonable prices…. plus a little bonus.
Butitisnotjustaquestionoffiber.ManyofPeru’smarketplaces
are true architectural monuments. The Surquillo market, for
example, was designed by a prominent Lima architect, Alfredo
Dammert. Another is the market in Arequipa, designed by the
French master Gustave Eiffel, or the Ramon Castilla Central
Market, the most modern of its time.

La feria tuvo un invitado especial y ese fue México, país que junto al Perú
tiene la mayor trayectoria y riqueza gastronómica en la región. Gracias a la
Embajada de México y el apoyo de Luis Limón (designado embajador de

norte dijera presente con una copiosa delegación que incluyó chefs y un
pedacitodesucultura.
EnlazonaderestaurantestuvimoslaparticipacióndelRestauranteNicos
de la Ciudad de México que estuvo al mando del chef GerardoVázquez.
En el marco de las clases magistrales de cocina estuvo Patricia Quintana,
del restaurante Izote y autora de 9 libros sobre cocina mexicana.
En el Gran Mercado se presentó un inventario de productos del Estado de
Pueblayde “LaCosteña”,empresalíderenelrubrodeproductosalimenticios
mexicanos.Asimismo,enlaseccióndecomidapopulartradicionalestuvoel
restauranteLaPoblanitaconsusriquísimosTacosalPastor.
Además, se expuso libros sobre su gastronomía y en las mesas
redondas estuvo Gloria López Morales, presidenta del Conservatorio
de la Cocina Mexicana y el conocido autor de libros de gastronomía
mexicana, José N. Iturriaga. Cabe anotar que toda esta delegación
fue homenajeada por Apega, como símbolo de hermandad entre
dos cocinas generosas y con harto picante.
The special guest at the fair was Mexico, which together with Peru
has the greatest and most established gastronomic reputation in
the region. Thanks to the Mexican Embassy and the support of Luis
Limon (designated ambassador of Peruvian gastronomy in Mexico),
Peru was able to welcome a large delegation from that northern
nation, including chefs and a small touch of their culture.
The restaurant area included the Nicos Restaurant from Mexico City,
under the guidance of chef Gerardo Vásquez, and the master cooking
classesincludedPatriciaQuintana,oftheIzoterestaurantandauthor
of more than nine books on Mexican cuisine.
The Grand Market also had an inventory of products from the State
of Puebla and from La Costeña, a leading company in Mexican food
products.Likewise,inthesectionofpopulartraditionalfoods,Mexico
was well represented by the restaurant La Poblanita with their
delicious Tacos al Pastor.
There was also an exhibition of Mexican cookbooks and a participant
at the discussion forums was Gloria López Morales, president of
the Conservatory of Mexican Food, and the well-known author of
Mexican cookbooks, José N. Iturriaga. Apega paid tribute to this
delegation as a symbol of brotherhood between two generous and
very spicy cuisines.

Hernando de Soto y Bernardo Roca Rey arrancaron el ciclo de
mesas con“Gastronomía, desarrollo y cultura”. A ellos se sumaron
Raúl Vargas y los ministros de Comercio Exterior y Turismo y
de la Producción, quienes junto a la Federación Nacional de
Trabajadores de Mercados y Apega, abordaron un tema medular:
“Nuevo rol de los mercados y la gastronomía en el Perú”. También
se analizó el impacto y el aporte de la gastronomía en el desarrollo
económico desmenuzando un informe que Apega encargó a
Arellano Marketing.
Asimismo, se examinó el tema gastronomía y biodiversidad,
se pasó revista al panorama de la cocina mexicana, y se montó
una dinámica con jóvenes para tratar y debatir el papel que
juega la gastronomía en nuestra sociedad. Como cereza de la
torta, se rindió tributo a Bernardo Roca Rey y Johan Leuridan
por sus destacadas labores en la edición de libros gastronómicos
–merecedora de varios premios internacionales-, y a la gran
maestra Teresa Ocampo, cocinera infatigable y precursora de los
programas culinarios por televisión.

talks with “Gastronomy, development and culture.” They were
joined by Raúl Vargas and the ministers of Foreign Trade and
Tourism, and of Production, who together with the National
Federation of Market Workers and Apega, broached the core issue:
“The new role of markets and of gastronomy in Peru.” An analysis
was also made on the impact and contribution of gastronomy
to economic development, by closely examining the report that
Arellano Marketing produced for Apega.
The issue of gastronomy and biodiversity was also discussed, as well
as an overall review of Mexican cuisine, plus a dynamic discussion
with young people to discuss the role that gastronomy plays in
Peruvian society. As the cherry on cake, Apega paid tribute to
publisher and epicure Bernardo Roca Rey and to Johan Leuridan,
dean of the tourism and cooking school faculty at the San Martin
de Porres University, for their outstanding work in publishing
cookbooks–manyofwhichhavewoninternationalprizes—andthe
greatteacherTeresaOcampo,tirelesscookandpioneeroftelevision
cookery programs.

Las calles de la feria estuvieron siempre salpicadas de
color y alegría. Pasacalles, retretas y desfile de personajes
pintorescos pusieron la cuota de buen humor y peruanidad
mientras la gente degustaba sus platos preferidos o hacía
colas por más sabor.
Chamanes,alegoríasconpersonajesqueejercieronantiguos
oficios como aguadores, y los infatigables muñecos que
invitaban al túnel de la biodiversidad, desparramaron su
buena onda y alegría desde las 10 de la mañana hasta las

The streets of the fair were always sprinkled with color and
a festive air. Informal parades, open-air concerts and a
parade of picturesque characters added the note of humor
and the Peruvian touch while visitors enjoyed their favorite
dishes or lined up for more flavor.
Shamans, allegories with characters who practiced ancient
trades such as water carriers, the dressed up doll characters
inviting visitors to the biodiversity tunnel, all contributed to
an enjoyable and lively atmosphere from 10 am until 11 at
night.

Con mucho esfuerzo y rigurosidad, una plataforma de
especialistas liderada por Apega editó y presentó en la
feria el libro: Ajíes peruanos, sazón para el mundo, editado
en colaboración con otras instituciones (Universidad
Agraria, Universidad San Martín, INIA y El Comercio). Una
joya en papel couché y a full color que se constituye en la
primera publicación sobre el insumo madre de la Cocina
Peruana. Asimismo, se presentó el Libro de la Anchoveta
y publicaciones sobre comidas regionales editadas por la

En cuanto al cine, se programó una batería de
documentales y películas relacionadas íntimamente con
la gastronomía. La oferta cinéfila estuvo integrada por De

(1994, Taiwán), Deliciosa Martha (2001, Alemania, Austria,
Italia y Suiza), Tomates verdes fritos (1991, EEUU), Tortilla
Soup (2001, EEUU), El pollo, el pez y el cangrejo real (2007,
España), Chocolat (2001, EEUU - Reino Unido), Banquete
de bodas (1993, Taiwán), Un toque de canela (2003, Grecia
– Turquía), y Como agua para chocolate (1992, México).
Apega worked closely and carefully with a group of
specialists to publish and launch a book on Peru’s
variety of hot peppers, Ajíes peruanos, sazón para el
mundo, in collaboration with the Agrarian University, the
UniversidadSanMartín,INIAandElComercio).Abeautiful
coffee-table book in full color, the first publication on the
mother ingredient in Peruvian cuisine. There were also
book launchings for the Libro de la Anchoveta (a book
on anchovy) and several tomes on regional cuisines
published by the Universidad San Martín de Porres.
A series of film productions were also shown,
documentaries and films intimately related to
gastronomy. The offer includes De ollas y sueños (2009,
Peru – Brazil), Eat, drink and love (1994, Taiwan),

Nacimos a fines de 2007 con el nombre
de Sociedad Peruana de Gastronomía
(Apega entre amigos) y en sólo dos años
logramos reunir a los principales actores de
la gastronomía peruana y cocinar un menú
de actividades que, hacia afuera, impulsara
la internacionalización de nuestra comida
y que, hacia adentro, rescatara y pusiera en
valor, las cocinas regionales.
Resguardar la excelencia de los insumos
de nuestros campos y caletas, y fomentar
la capacitación de jóvenes en escuelas de
cocina como la que abriremos en enero
de 2010 en Pisco con el apoyo de Senati,
son ingredientes que demuestran la solidez
de nuestro proyecto: promover nuestra
gastronomía, reforzar la identidad nacional
y posicionar al Perú como destino turístico
de primera clase.
Eso somos, eso es Apega. Reunimos a
gastrónomos, nutricionistas, productores
agropecuarios, pescadores artesanales,
dueños de restaurantes, cocineros,
enólogos, vendedores de mercado y
periodistas, para consolidar el crecimiento
de nuestra gastronomía sin exclusiones.
Our institution was established at the
end of 2007 as the Sociedad Peruana
de Gastronomía (Apega among friends)
and in only two years we have been able
to bring together the principal players of
Peruvian gastronomy and cook up a menu
of activities that, beyond our borders,
will boost a worldwide awareness of our
cuisine, and, within the country, recover
and give value to all the regional cuisines.
Protecting the excellence of ingredients
from our fields and fishing coves, and
encouraging the training of young people
in cooking schools such as the one we
open in January 2010 in Pisco, with the
support of the technical training institute,
Senati, are components that prove the
soundness of our project: to promote
Peru’s gastronomy, strengthen national
identity, and position Peru as a first class
tourism destination.
That is what makes Apega. We bring
together gastronomes, nutritionists,
farmers, artisanal fishermen,
restaurateurs, cooks, enologists, market
vendors, and journalists, to consolidate
the grown of our gastronomy without
exclusions.
