enough to be affiliated with a professional culinary academy. The head chef is a
published author of many cookery books and is a member of the Gastronomic society of
Bilbao.

dishes include Marmitako which is fish stew, made with tuna, potatoes, onions, peppers
and tomatoes and Bacolao a la Vizcaina which is salt cod in a rich red pepper sauce.
