Alain Lalanne of Domaine San de Guilhem, is one of the region’s best producers, using
an unusually high proportion of Gros Manseng in his stylish,Gascogne blend.Didier
Barre’s Madiran ‘Haute Tradition’ is a ruggedly fruity, oak-aged blend of mainly
Tannat & Cabs Franc and Sauvignon.Brumonts Madiran Vielles Vignes is made from
seventy-year-old Tannat, a true Vin de Garde! his dry aromatic Gros Manseng &
Pacherenc Sec made from 100% Petit Courbu, are delightful. The style of the ancient,
luscious wines of Jurançon is perfectly exemplified in the gorgeous Clos Uroulat from
Charles Hours. This wine is an exotic, beautifully balanced late picked cuvee of Petit
Manseng. Chateau Pinearie Cahors is a chunky mouthful of Malbec, full of fruit &
mineral content from the iron rich soil.

Picpoul de Pinet from Grange des Rocs is fresh & bracing as it should be resembling a
fine but fuller bodied Muscadet. Clos du Gravillas‘s Muscat is aromatic perfumed and
grapey, natural and unfortified. Mas de Daumas Gassac makes perhaps one of the
world’s most unique white wines, with no fewer than 18 grape varieties. White
Burgundy meets Condrieu in the Languedoc! The Rose Frizant is a lightly petillant
stylemade from’Saignee’ - or bleeding of the estate’s Cabernet Sauvignon. ‘Le Soula’
from Domaine Gauby is biodynamically produced on the wild slate terroir of the
Coteaux de Fenouillet.

vintage has a distinct personality which reveals itself with ageing.The sweet

ancient chalky terroir known as Langesse,with the fabled slopes of the Mont St
Victoire as a backdrop this must be one of the most iconic sites in Mondovino. A blend
of Mouvedre Grenache & old vine Carignan matured in foudre it combines garrigue
herb aromas and flavours together with rich & elegant tannins, a compelling red &
uniquely Provencal in character.Domaine Ott’s Clos Mireille Blanc from Rolle & very
old vine Semillon is a classic style.Domaine Turenne produce exquisite individual &
flavoursome rose, the perfect foil for hearty Provencal cuisine.

White Bordeaux
From the bone dry to the sweet and luscious, white Bordeaux covers a range of styles
as well as a large geographical area. The dry, unoaked Semillon-Sauvignon blend from
Chateau des Antonins is crisp and floral,Olivier Bernards Domaine de Chevalier sets
the standard for classic age-worthy dry white Bordeaux, exciting to taste young,
majestic and Montrachet-like when fully mature. The quality of the great luscious
Semillon/Sauvignon based wines of Sauternes and Barsac is undisputed, but the lesser-
known Cadillac ,Cerons & Saint Croix du Mont appellations to the east are a source of
some truly great less expensive alternatives. Chateau Fayau occupies a privileged
position on the highest part of the Cadillac côteau, producing a full and honeyed
botrytised style. Chateau de Cerons is a dead ringer for Barsac itself.

in the more famous villages of the Côte de Beaune, Nicholas Maillet’s ‘ecological’
wines echo those of the great Jean Thevenet.Michel Paquet (Domaine de Valanges)
farms his immaculate vineyards organically around the picturesque village
of Davaye underneath the imposing prehistoric rock of Solutre.

Côte Chalonaise
This is an appellation of continually growing importance, sharing the limestone-based
soil type as well as viticultural practices, of the more prestigious (and expensive) Côte
d’Or to the north. The venerable Maison Faiveley has undergone a recent
transformation realising the great potential of their Domaines in the Chalonnaise as
well as the great sites of the Côte D’Or. Danjean Bertoux’wines are traditional with
earthy Pinot character & a pure mineral style.

The quality of the wine from this, the southern part of the Côte d’Or, speaks for
itself. Home to many of Burgundy’s most important négociants and domaines, the
Côte de Beaune produces the finest white wines of Burgundy, as well as some
excellent reds. This is the natural homeland of the Chardonnay grape, its terroirs
producing wines that are at once varied, subtle and complex.

Although better known for the production of fine white wine, the best villages of the
Côte de Beaune undoubtedly belong to the premier league of red Burgundy. They are
in general slightly lighter than their Côte de Nuits cousins, but share their

The Falchini estate is based in the Colli Senesi hills with views of medieval San
Gimignano‘s famous towers.The Chianti Colli Senesi is everthing it should be, fresh
and appealing with cherry lozenge fruitiness. The medieval poet Buonarotto said that
a good Vernaccia should “kiss, lick, sting & bite” this does! They also make a lovely
Vin Santo. Based on an old Brunello clone parcel of Sangiovese, Villa Rosa’s Chianti
Classico has an elegance & refinement from a bygone era.Produced entirely from the
indigenous Sangiovese di Lamole clone, Podere Poggio Scalette is situated high up on
the hill of Ruffoli, 300 metres above the town of Greve in the heart of Chianti
Classico. The stunning view, supposedly as seen & depicted by none other than
Leonardo(Da Vinci) himself, was actually encapsulated perfectly in a painting by Juri
Fiores’s grandmother, and not surprisingly was chosen to become the estate’s
emblematic label. Having served the requisite apprenticeship to his master oenologist
father Vittorio, Yuri Fiore is now at the helm, crafting beautiful expressive wine from
this unique terroir. The ‘04 Il Carbonaione is so much more than a Super Tuscan - a
real wine of grace and power.
Poggio Argentierra produces a fine range of powerful full bodied dry reds displaying
oodles of characteristic fragrant black cherry fruit & the unique Mediterrananean
coastal influence typical of the Maremma. Lisinis’s Brunello di Montalcino is a great

Glossary of Terms & Ideas
Biological Viticulture
A loose term, called viticulture or agriculture biologique in France, which is generally used
interchangeably with organic viticulture (see below).
Biodynamic Viticulture
Known as La Biodynamie in French, this is the most extreme form of the organic family of
viticultural practices, encompassing also the wine’s vinification. The importance of soil
fertility is joined by cosmic considerations, such as the positions of the planets and the
phases of the moon during different stages of the wine growing and making processes.
Conventional agrochemicals and fertilizers are absolutely forbidden, with the exception of
Sulphur and Bordeaux Mixture (Copper Sulphate & Lime); instead, natural liquid extracts
dynamised in water are used to nourish the vines. In essence an holistic pan- homeopathic
system - ‘I am what I drink’
Organic Viticulture
Described by Dr. Richard Smart as: “a system of grape growing which is based not on the
plant but on an attempt at rational management of the living part of the soil–regarded as a
complex, living environment interacting closely with the flora and fauna which inhabit it–
while respecting biological cycles and the environment”. This is contrasted with
‘conventional’ viticulture, in which chemical fertilizers are permitted to treat the soil, at
best compromising the essence of a site’s individual Terroir (see below), and at worst
possibly even contaminating it. Practitioners of organic viticulture endeavor to nurture a
polycultural soil & diverse vineyard ecosystem with the aim of producing wine which is
simply and ultimately ‘good’ for you & the environment.
Sustainable Viticulture, Terra Vitis, Lutte Raisonee
A more pragmatic approach in an economic & environmental sense than organic viticulture,
the aim of both is essentially the same, the promotion of a vineyard polyculture. Enhancing
soil fertility is essential, green cover crops are promoted, as is undervine ploughing, use of
conventional herbicide & pesticide is generally discouraged except in extreme conditions.
Terroir
A French term with no direct translation into English derived from the word terre (earth or
soil). It encompasses a vast–many believe indeterminate–array of environmental factors
governing a viticultural site, making every site individual, and the wine it produces, by
implication, unreproduceable. Components of terroir broadly include soil, topography, and
climate (macro, meso, and micro), and the ways in which they interact with each other.
Different aspects of terroir tend to be more exaggerated by different viticultural
traditions: in France, for example, the importance of soil is pre-eminent, whereas in
Germany, aspect is thought to be most critical. The term has been hotly contested by New
World viticulturists, many of whom believe it to represent an unjustified, unproved French
brand of mysticism. For these viticulturists, the importance of soil, for example,
is exhausted by the efficacy of its drainage. Indeed, it is clearly difficult to scientifically
relate such an arcane, complicated concept to specific taste compounds found in wines
from different sites. This said, the finest New World producers are increasingly conceding
the importance of this ancient European concept, admitting that the vine is a living
organism and is as such affected and defined by its organic, geographical and climatic
surroundings. Could the scent of garrigue herbs in a Southern Rhône red, or the suggestion
of olive groves in a Piemontese Nebbiolo, really be mere coincidence?

The dry, unoaked Semillon-Sauvignon blend from Chateau des Antonins is crisp and floral,Olivier Bernards Domaine de Chevalier sets the standard for classic age-worthy dry white Bordeaux, exciting to taste young, majestic and Montrachet-like when fully mature. The quality of the great luscious Semillon/Sauvignon based wines of Sauternes and Barsac is undisputed, but the lesser- known Cadillac ,Cerons & Saint Croix du Mont appellations to the east are a source of some truly great less expensive alternatives. Chateau Fayau occupies a privileged position on the highest part of the Cadillac côteau, producing a full and honeyed botrytised style. Chateau de Cerons is a dead ringer for Barsac itself.   • 45. 45 Glossary of Terms & Ideas Biological Viticulture A loose term, called viticulture or agriculture biologique in France, which is generally used interchangeably with organic viticulture (see below). Biodynamic Viticulture Known as La Biodynamie in French, this is the most extreme form of the organic family of viticultural practices, encompassing also the wine’s vinification. The importance of soil fertility is joined by cosmic considerations, such as the positions of the planets and the phases of the moon during different stages of the wine growing and making processes. Conventional agrochemicals and fertilizers are absolutely forbidden, with the exception of Sulphur and Bordeaux Mixture (Copper Sulphate & Lime); instead, natural liquid extracts dynamised in water are used to nourish the vines. In essence an holistic pan- homeopathic system - ‘I am what I drink’ Organic Viticulture Described by Dr. Richard Smart as: “a system of grape growing which is based not on the plant but on an attempt at rational management of the living part of the soil–regarded as a complex, living environment interacting closely with the flora and fauna which inhabit it– while respecting biological cycles and the environment”. This is contrasted with ‘conventional’ viticulture, in which chemical fertilizers are permitted to treat the soil, at best compromising the essence of a site’s individual Terroir (see below), and at worst possibly even contaminating it. Practitioners of organic viticulture endeavor to nurture a polycultural soil & diverse vineyard ecosystem with the aim of producing wine which is simply and ultimately ‘good’ for you & the environment. Sustainable Viticulture, Terra Vitis, Lutte Raisonee A more pragmatic approach in an economic & environmental sense than organic viticulture, the aim of both is essentially the same, the promotion of a vineyard polyculture. Enhancing soil fertility is essential, green cover crops are promoted, as is undervine ploughing, use of conventional herbicide & pesticide is generally discouraged except in extreme conditions. Terroir A French term with no direct translation into English derived from the word terre (earth or soil). It encompasses a vast–many believe indeterminate–array of environmental factors governing a viticultural site, making every site individual, and the wine it produces, by implication, unreproduceable. Components of terroir broadly include soil, topography, and climate (macro, meso, and micro), and the ways in which they interact with each other. Different aspects of terroir tend to be more exaggerated by different viticultural traditions: in France, for example, the importance of soil is pre-eminent, whereas in Germany, aspect is thought to be most critical. The term has been hotly contested by New World viticulturists, many of whom believe it to represent an unjustified, unproved French brand of mysticism. For these viticulturists, the importance of soil, for example, is exhausted by the efficacy of its drainage. Indeed, it is clearly difficult to scientifically relate such an arcane, complicated concept to specific taste compounds found in wines from different sites. This said, the finest New World producers are increasingly conceding the importance of this ancient European concept, admitting that the vine is a living organism and is as such affected and defined by its organic, geographical and climatic surroundings. Could the scent of garrigue herbs in a Southern Rhône red, or the suggestion of olive groves in a Piemontese Nebbiolo, really be mere coincidence?
