директорите и другите педагогически
специалисти съгласно Закона за
предучилищното и училищното образование в
България.
Обучението се провежда по учебни програми и
учебни помагала, утвърдени от министъра на
образованието и науката.
С право да издава легитимни удостоверения за
проведено обучение по съответен предмет и
клас. Всички удостоверения се въвеждат в
регистъра на Министерство на образованието и
науката на България.
Нашите учениците продължават обучението си в
съответен клас в училищната система в

Mofongo – The Puerto
Rican Classic
Mofongo is one of
many dishes popular
in Puerto Rico. It is
a dish usually made
from boiled or fried,
pulverized, unripen
plantains. Similar
dishes known as Fufu
de plátano in Cuban
cuisine and Mangú
in the Dominican
Republic - both made
by boiling plantain and
then mashing them.
But unlike Mofongo,
Fufu is made of either
green or semi-ripe
plantain boiled then
mashed.
A predecessor of
Mofongo came from
West and Central
Africa, and was brought
to Puerto Rico with the
slave trade, according
to Gozamos. Stuffed
mofongo, called
Mofongo relleno, can
include chicken, beef,
pork, bacon, shrimp,
lobster, prawn or
vegetables, olive oil,
among other options.
This classic dish is
popular comfort food
for Puerto Ricans
and other Caribbean
countries. Yuca, yam,
and cassava were used
as well.
Bunny Chow
The
Americans
have hot
dogs; South
Africans have bunny
chow. Bunny Chow
originated in Durban’s
Indian community
during the Apartheid.
From 1948 to 1994,
Apartheid laws forbid
blacks from entering
restaurants or cafes, so
they took to ordering
take-out meals from
the sides or backdoors
of restaurants. The
most popular dish at
the time was roti and
beans, but roti, a thin
wheat bread akin to a
crepe, fell apart easily if
not eaten immediately.
Being a thin wheat
naan, roti fell apart.
This meant people got
creative and began
using loaves of bread
as take-out containers
– scooping them out
and filling them with
the bean curry. The
invention of the recipe
itself was also from the
Indian community. As
Indians traditionally
ate with their hands, it
was done by hollowing
out the bread and
then served with the
curry bowl being the
hollowed out loaf.
“Bunny” is a
permutation of the
word Bania, an Indian
caste of merchants who
sold the curries. The
meal, which is served
with chicken, lamb,
vegetables, sits in the
type of rectangular
white loaf. They’re
available in quarter,
half, or full sizes, and
the hollowed-out lump
of bread that sits on
top of the finished dish
is called a “virgin.”

Nine Things To Do With
Parsley
Parsley is a great herb to
have in the kitchen—but
what do you do with
bunches and bunches of
it? Treat parsley well and
it will last a while. At the
market, look for bright-
green, lively bunches.
Because parsley grows in
sandy soils, it needs to be
thoroughly washed. When
you buy fresh parsley, trim
the ends off the stems
right when you get home,
and stick it in a cup of
water. Don’t let it go to
waste! Start putting it on
everything.
1. Use chopped parsley
on everything: Don’t
chop it too finely — bigger
pieces are prettier and
have more flavor. Throw
it with abandon on top of
grilled vegetables, roasted
potatoes, a cold green-
bean salad, stews, soups,
pasta, hot or cold grain
dishes like couscous or
quinoa or tabbouleh
2. Use it for salad with
lots of parsley in it: Tear
up any mild lettuce, and
mix in plenty of parsley,
roughly chopped, then
dress with a favorite
vinaigrette. Maybe it
sounds boring? It is not.
3. Tabbouleh is great with
a lot of parsley: In most
Middle Eastern countries,
they use a very fine bulgur
and there is more parsley
and mint in the salad than
there is bulgur.
4. Throw some parsley
into your next green
juice. It’s amazing!
5. Parsley is a great
addition to homemade
soup: combine it with
some potatoes (or sweet
potatoes), celery, onion,
garlic, salt, black pepper,
and water, and simmer for
an hour.
6. Fry parsley for a
flavourful garnish: mix
flour with wine to make a
thin batter. Coat the sprigs
and fry until just golden.
7. Use it for garlic bread:
chop it up, mix it into
softened butter, and
slather it on a crusty loaf

Similar to the more
familiar milk chocolate,
dark chocolate is made
from beans of the cacao
tree, native to South
America. Columbus
‘discovered’ these beans,
and the returning crew
of his fourth voyage took
them to Europe. which
have been processed. The
difference between dark
and the milk chocolate
is the amount of cocoa
solids that they have.
While milk chocolate has
milk and sugar added
to its 10 percent cocoa
liquor content, dark
chocolate contains more
than 60 percent cocoa
solids with little or no
sugar added. Here are 10
things you probably didn’t
know about chocolate.
1. Despite discovered in
South America, nowadays
most cacao (nearly 70%
of the world’s supply)
comes from Africa. The
Ivory Coast is the largest
single producer, providing
about 30% of all the
world’s cacao.
2. It may be red wine’s

is an actual scientific
reason for it. Just as red
wine gets its tannin from
grape skins, chocolate has

2,5 чаши брашно
150 гр.боровинки( предварително
овалвани в 1 суп.лъж.брашно.
Изпекох го в правоъгълна
формичка на 170 гр.около 45 мин.
"Телешко росто"
Използва се 1 кг. телешки бут,
това е едно цяло месо, което
не е предварително нарязано
на филийки. Запечатваме
месото в гореща мазнина,
така че да се получи приятен
загар по всичките му страни.
(Аз го пържа направо в
тенджерата под налягане,
която ще я използвам за
готвенето на месото).
Прибавям 2 гл.лук( нарязани
на 4), 3-4 скилидки чесън,
3-4 моркова( нарязани на
едро), 8-10 зърна черен
пипер, 2-3 дафинови листа,1
стрък розмарин, сол по вкус..
Доливам с 3-4 чаши вода ( до
половината на месото) и готвя
в тенджера под налягане
40 мин. или в нормална
тенджера около 2,5( месото е
твърдо). След това изваждам
месото от тенджерата, нарязвам
го на тънки филийки и го оставям
настрани. Изцеждам бульона
в друг съд и също го оставям
настрани. В плитка и широка
тенджера запържвам 1 суп.лъж
брашно с 1 суп.лъж.краве масло,
прибавям изцеденият бульон(
около 3-4 чаши)и му позволявам
леко да се сгъсти. Прибавям
нарязаното месо и готвя още
около 30 мин.( докато омекне
месото). Сервирам с гарнитура
картофено пюре.
(също така и морковите могат да
се използуват за гарнитура).

лимон, 1 суп лъж.масло,
3-4 бр. каранфилови
зърна.
Избират се узрели ,но
по твърдички смокини,
измиват се внимателно
и се потапят за една
нощ в разтвор от 500 гр.
негасена вар+5-6 л.вода.
(внимавайте когато
гасите варта, защото
се получава реакция, в
която се отделя голямо
количество топлина).
Разтвора се разбърква
само веднъж, чака се да
се утаи около 2-3 часа,
и после внимателно
се премества в
друг съд, заедно
с бялата покривка
която се образува на
повърхността и.
Накиснатите смокини се
изваждат от разтвора,
мият се обилно 2-3
пъти и се поставят в
тенджерата.
Прибавя се захарта и
около 1 чаша вода.
След като кипне,
прибавяме маслото и
варим на слаб огън до
готовност, като отвреме
на време разбъркваме
много внимателно.
(смокините също
пускат течност,
затова захарта не
става на карамел).
Като се получи
желаната гъстота,
прибавяме лимоновия
сок, каранфилите
и приключваме с
готвенето.
Още горещи се слагат в
бурканчета и се обръщат
с капачките надолу.
Лимонов кекс
4 яйца
1,5 чаша захар( чашата е
200 мл.)
1 чаша прясно мляко
1 чаша олио
Настъргана кора на 1
лимон
2 суп.лъж.лимонов сок
1 бакпулвер
1 ванилия
3 чаши брашно
400 мл.течна сметана
400 мл.прясно мляко
4 суп .лъж. захар (може
и повечко, но аз имах
предвид ,че ще украся
крема със сладко от
боровинки и затова
сложих по малко)
1п.ванилия
2 пакетчета желатин
( желатина го
използвайте по
разписанието на
опаковката, защото
има много различни
опаковки)
● Смесих в малка
тенджерка всички
продукти освен
желатина, сложих
тенджерката на слаб
огън и с постоянно
разбъркване им
позволих да се стоплят.
● Точно преди да кипне
сместта, отстраних от
котлона и прибавих
желатина. ● Разбърках
хубаво докато се
разстопи напълно и
после разпределих
все още топлата смес
в предварително
изплакнати с вода
стъклени формички( така
ще се обърнат по лесно).
Може да използвате
и силиконови
формички. От това
количество продукти
се получиха 6 бр.малки
стъклени чашки. ●
Сложих кремчетата в
хладилника и изчаках
докато се стегнат (най
малко 2-3 часа). ●
Преди да ги сервирам ги
обърнах в чинийка и и ги
украсих със сладкото от
боровинки.
Aшуре (Аşure)
Традиция е да се прави
Ашуре на 10 ‚тия ден на
един от свещените месеци
за мюслюманите- месеца
Мухаррем. Така приготвеното
ашуре се раздава на приятели
и съседи.
● Сложих 2 чаши жито
с 5 чаши вода на котлона и като
заври, около 5 мин.
● Изцедих житото и изхвърлих
пожълтялата вода . Същият
процес го повторих още
веднъж. На третия път като
заври водата изключих
котлона, затворих капака и
оставих житото в горещата
вода да набъбне за една нощ.
● Сутринта включих пак
котлона и варих житото още
15-20 мин. докато омекне
напълно като допълвах с вода
ако има нужда.
● Към така омекналото
жито прибавих 1 чаша
предварително сварен и
изцеден боб, 1 чаша сварен
и изцеден нахут, четвъртина
чаша измит ориз и продължих
да варя докато леко се сгъсти.
(не трябва да е много гъсто).
● Последователно прибавих
1 чаша сушени жълти кайсии
нарязани на малки кубчета
(предварително накиснати
във вода), 1 чаша стафиди
(също накиснати), 1/2 чаша
сушени смокини (накиснати),
1 чаша лещници, коричка на
1 портокал, 1-2 суп.лъж.сушен
касис, 2-3 каранфила варени
в малко вода (прибавяте

FOOD RECIPES - РЕЦЕПТИ
Мини веган тортички
за него и за нея
Като подготовка трябва да се
накисне кашу за една нощ.
Варен на пара или печен във
фолио сладък картоф, но може
и без него, може да се замени с
банан, варен кестен и др.
Ще започна от блатчетата за
четитите тортички.
Смилат се с блендер или пасатор
около 12 фурми, ч.л. смляна
чия или ленено семе, две шепи
смлени орехи (може други ядки),
шепа овесени ядки, чл какао
(или две с.л. рожково брашно),
три,четири счукани какаови
зърна, една с.л. слънчогледови
семена (може покълнали),
малка щипка морска сол, две с.л.
кокосова мазнина.
Оформят се осем топки колкото
голям ореха и се сплескват
между два кръга хартия за
печене или фолио изрязана с
диаметър на кафяна чашка, на
дебелина около сантиметър да
са блатчетата.
Бял крем - смилат се с пасатор
кашуто, една/две с.л. портокалов
сок, подсладител на вкус (мед,
стевия), с.л. разтопено кокосово
масло или какаово. Става също
като маслен крем.
Крем за белите тортички със
сладък картоф.
Може да се смени с банан, варени
кестени, райски ябълки и др.,
просто и вкусът ще е по различен.
С пасатора се смилат картофа, едно
авокадо, няколко фурми за сладост
на вкус, ч.л. какао.
Шоколадов крем за шоколадовите
тортички.
Смилат се едно авокадо, няколко
фурму на вкус, няколко сушени
сливи (ако са много сухи, накиснете
ги), една чл какао, ванилия, малка
щипка морска сол.
Бяла тортичка:
Реди се блат, крем с картоф, блат,
обаля се в кокосови стърготини,
шприцова се(аз нямам шприц и го
правя с най- обикновена найлонова
торбичка клъцната в края) украсява
се в случая с малиново желе и
захаросани лимонови корички
Шоколадова тортичка:
Реди се блат, белия крем от
кашуто, резенчета зелена смокиня
от домашно сладко или сушена
накисната, блат и тучно се омазва
с шоколадовия крем, поръсва се с
какао през цедка и натрошен черен
шоколад, и по една разполовена
смокиня за разкош
Сурова шоколадово-
черешова торта
Блат
В блендера се смилат фурми, овесени
ядки,лешници, кокосово масло,какао и
половин остъргана шушулка бурбонска
ванилия, щипка хималайска сол. Блата
се разтила добре пресован върху
покрита с хартия за печене форма
за торта, може и направо в чиния за
торта, като отдолу се поръси с кокосови
стърготини да не залепва и се слага в
хладилник да стегне докато се приготвя
крема.
Крем
С пасатор се смилат изчистени от
костилките фурми, череши,брашно от
ленено семе,предварително накиснато
кашу, натрошени какаови зърна,
кокосово масло.
Намазва се блата и пак в хладилника,
докато направим шоколадовата
заливка, а най-добре е за повечко
време да стегне.
Шоколадова заливка
Най-лесно може да си разтопите
шоколад на водна баня и с него да
залеете. Аз си го направих така: на
водна баня разтопих какаово масло(по-
добре какаова маса ако имате) и какао
на прах, добавих другата половинка от
остърганата шанилова шушулка, щипка
хималайска сол и след като поизстина
подсладих с мед, енергично бъркане
става нещо като тесто, но по-рядко
може да се излива, което и направих
върху тортата, веднага се втвърди.
Украса по края с кокосови стърготини,
бадеми(накиснати и обелени)
бадемови трюфели и пресни череши.
За бадемовите трюфели използвах
останалия пулп от бадемово мляко,
смесен с мед, натрошени какаови
зърна,канела, индийско орехче, счукан
карамфил, кокосово масло, кокосови
стърготини, правят се топчета и се
овалват в какао.

топка моцарела се мариноват с поливка
от лимон, зехтин, ситно накълцана
чили чушка, зелен кориандът, мед и
хималайска сол.

Prosciutto
Prosciutto frequently
features on antipasto
platters. Its delicate taste
contrasts nicely with
fruit (typically melon or
figs) to make easy two-
ingredient appetizers,
and it also pairs nicely
with vegetables like
asparagus. Prosciutto
stands out in salads
and sandwiches, and
as a fabulous pizza
topping. Although there
is no certainty about
it, it’s more than likely
that the Italian name
‘prosciutto’ derives from
the combination of two
Latin words: the particle
‘pro’ (‘prae’, ‘before’)
and ‘exsuctum’ (past
participle of the Latin
verb ‘exsugere’, whose
translation is ‘to suck’).
But there are so many
prosciuttos? Which one
would you choose? You
might have heard of the
super-uber Prosciutto di
Parma, right? Well, that
is just one of the so many
varieties of cured meats
produced in Italy.
The earliest evidence
of the production of
a
specialty similar to what
we now call Prosciutto di
Parma date back to the
Etruscan period. At that
time, the populations
settled in the Padan
territories used a method
involving the use of salt
to preserve pork meat.
In the past people didn’t
have fridges and their
way of extending the life
of some products was
covering them in salt, or
smoking them. By doing
this they realised that
the meat not only was
preserved but also it
acquired an additional
taste.
But which are the most
famous Italian varieties?
1. Prosciutto di Parma
(Emilia Romagna) is
made with only two
ingredients: meat and
salt.
2. Prosciutto San Daniele
(Friuli) is the second
most famous Italian ham
abroad.
3. Both Prosciutto di
Parma and Prosciutto
San Daniele need to be
dry-cured for at least 13
months.
4. Not all pigs are
suitable for producing
Prosciutto di Parma.
Those used by the
traditional producers
belong to the Large
White Landrance or
Duroc breeds.
5. There are two types
of prosciutto - cotto
(cooked) and crudo (raw).
But eating crudo we are
not really eating raw
meat - these meats are
dry-cured.
6. Prosciutto rule of
thumb: Never ever
freeze either Prosciutto
di Parma or Prosciutto
San Daniele. The risk is
an alteration in quality
and flavour. It’s best to
buy them and eat them
straight away!
7. The quality of
prosciutto is entirely
in how it’s cured. The
outside of the ham is
usually rubbed with just
salt and sometimes a mix
of spices.
