Zafarani basmati vegetarian fried rice with vegetables and egg
1. Ingredients:
2 servings rice (Zafarani reserve Basmati or Zafarani
Brown)
1 tablespoon coconut oil or grapeseed oil
2 c. vegetables (mushrooms, carrots, and peas)
1/2 c. edamame
2 eggs
2 tablespoon soy sauce
1/4 teaspoon dried ginger
1/4 teaspoon garlic powder
Directions:
If rice is not yet cooked, prepare according to
package directions.
Heat the oil in a skillet over medium-high heat.
Add the vegetables and cook for a couple of minutes,
until they’re nearly tender.
Add the cooked rice and then create a well in the
center of the rice/ vegetable mixture. Add the two
eggs in the center of the well and quickly scramble.
Mix the rice, eggs, and vegetables together and add
the soy sauce, ginger, and garlic. Once the soy sauce
has coated everything evenly, you’re done! Serve
and enjoy!
