Objective
Identify job roles and
responsibilities in food and
beverage service industry.
What are the different job roles in food
and beverage industry?
Let’s complete the puzzle
1. Go to your groups.
2. Group leaders will pick the situation
bearing the job roles your group will
represent.
3. Categorize which job role your group will
represent based on the situation.
4. Enumerate all the possible job
descriptions of your group based on the
situation the leaders picked.
5. Present, explain, and defend to your
classmates why the situation your group
represented described your job role.
Restaurant manager
Ms. Hee supervises the restaurant’s business
operation. She makes sure that the employees know
their shift (work schedule) and their day’s off. She also
monitors the inventory, orders the things needed for
the restaurant’s operation. She has the final say on
the menu items and on resolving customer issue. She
hires and sometimes fires the delinquent employees.
Reception waiter
Sheena is the first person you talk to when
you enter the restaurant. She greets you with a
smile and shows you to your table. You can call
her to book and reserve tables and other inquiries
that you have about the availability of the
restaurant. She is also assigned to allocate
reservations to particular stations in the
restaurant.
Head waiter
Mr. Rizal has been working for 10 years now. He is
very well-known by the patrons of the resto. He
organizes the food and beverage staff, and trains the
new waiter to make sure that the service they provide
meets the standard and will make the customers have
the best experience. When the restaurant manager is
away, he usually takes over the restaurant’s operations.
He also relieves the duties of some food waiters or even
the reception waiter on their day’s off.
Food waiter
Gina works in a full-service restaurant. She
sets up tables and decorates it table napkins and
flowers. When the guests are seated, she brings
them a menu and takes their order, and
sometimes promote house specials, serves food,
takes payment and brings the guest’s change.
Beverage waiter
Henry is the man who usually stays at
the bar counter in the restaurant. He sets up
glasswares to be used in service. He takes
drink orders and usually gives food and
beverage combination. He presents and
serves drinks to guests.
Busser
John liaises between the kitchen staff and the
waiting staff. He makes sure that the waiters
have all the things they need in their service. He
takes the used and unwanted dishes from the
table and/or room after service. He deals with
spills.
Mix and match
1. Charlie has cleared the table
on Room 405.
2. The table was reserved by
Mr. Boni.
3. He trains the newly hired

Human Knot
Form a circle within your group. Cross
your arms and reach out your hands to
someone NOT beside you, holding
different persons at each hand. Your
job is to untangle yourselves from the
knot without letting go of anyone’s
hand. You can assign a director to help
you in your task. The first group to
untangle themselves in five minutes gets
an additional 5 points.
HUMAN KNOT
Human knot
What was it like trying to get out of the
knot?
Do you think you would be able to
untangle it right away when you first
began?
If members of the group were not
helping to get out of the knot, how
did that affect the outcome of the
exercise or people’s feelings about
it?
