3. Truffles from Abruzzo
Abruzzo is considered a fertile land, ideal for the development of various types of fine truffles, fragrant and deli-
cious: fresh and excellent flavor for flavoring and tradition of the first and second courses of meat and fish more
popular not only in traditional restaurants but also in all the houses of the gourmet.
Among the types of truffles Abruzzo most appreciated and requests are the most precious truffle known as white
truffle (Tuber magnatum Pico), the black truffle (Tuber melanosporum Vitt.), The white truffle or marzuolo (Tuber
borchii Vitt.), The hooked truffle (Tuber aestivum var. uncinatum Chatin), the black winter truffle or brumale (Tuber
brumale Vitt.) and summer truffle or black truffle (Tuber aestivum Vitt.). Every quality of the precious underground
fungus matures at different times of the year: in this way you can have fresh truffles and perfumed all year, from
summer to winter.
All Abruzzo is the land of truffles, but each region has among the different types of local products truffle depending
on the areas where it is most abundant. In the lands of Vasto the white truffle is the king of the table, in Teramo the
black truffle is one of the best known treasures of the earth, and other delicious summer truffles, winter and cha-
racterized by spicy and musky.
4. Black Perigord
(Tuber Melanosporum Vitt.)
Harvest: 15th November - 15th March
Organoleptic features: the rind looks like a warty surface black, with small reddish patches if the pro-
duct is immature. The inside is black-brown with slight whitish veins very dense. The fragrance is aro-
matic, not too pungent, and the delicate flavor.
Habitat: widespread in the Central Apennines, particularly in Abruzzo. It can be grown in suitable land,
specially reforested with particular arboreal species.

Black Uncinate
(Tuber unciantum Chiatin)
Harvest: 15th January - 30th April
Organoleptic features: the rind is smooth and the color can vary between white ocher and orange
dark or very dark. The inside is initially whitish, then with the maturation assumes a reddish brown; has
veins rather large but sparse, branched, whitish which then turn brown, with the passage of time. The
aroma is penetrating and reminds the garlic, and the taste, not particularly pleasant, making it someti-
mes indigestible even after cooking.
Habitat: widespread in the Central Apennines, particularly in Abruzzo. It can be grown in suitable land,
specially reforested with particular arboreal species.

White Truffel
(Tuber magnatum)
Harvest: 1st October- 31th December
Organoleptic features: outside has a smooth yellow ocher or olive yellow. The inner flesh is yellowish
white with brownish shades that vary depending on the maturity, the type of soil and the plant which
lives in symbiosis: for example truffles that come close to an oak tree, have an inner pulp hazel, while
those that grow close to the beech, are more reddish. It has a particularly strong aroma and unique,
cheese and garlic; the taste, it may seem slightly hot and vaguely similar to that of parmesan cheese.
Habitat: is particularly common in Umbria, Piedmont, Tuscany, Marche and Abruzzo.
Sizes: from 9 to 400 gr.

Black Summer Truffle
(Tuber Aestivum Vitt.)
Harvest: 1st May- 31st August
Organoleptic features: the rind has a black color, with warts protruding, large size, which make typi-
cal. The flesh inside is brown in color with numerous whitish veins, more or less subtle. The scent is
gentler to other truffles blacks and flavor reminiscent of mushrooms.
Habitat: symbiotic fungus, hypogeum, grows in association with sawmills, spread over a large amount
of land, even if it prefers soils calcium-magnesium, drained, rich in fine and coarse grain sizes.
