• The water vapour transmission rate (WVTR)
through the container is determined by:
– Container wall thickness
– Permeability of the packaging material
– Difference between the external and internal relative
humidity environments
• Driving force for the water flux through the container
4. TESTING
• Specimens are attached to the top of the
dishes by means of a sealant
• Dishes contain desiccant / water depending
on method
• Complete assemblies are inserted in the
atmosphere and after specific period of
time are weighed accurately to determine
gain or loss.
• Test is conducted until nominal steady state
exists

9. Oxygen permeation rate (O2TR)
• Oxygen- thief of flavor, texture, color,
nutrition & shelf life
• True shelf life condition tests – able to
control RH% independently on each side of
the material
• Test - coulox sensor
• The coulox oxygen sensor is a fuel cell that
works in accordance with faraday’s law.
When exposed to oxygen, the coulox
sensor generates electrical current
proportional to the amount of oxygen.
