This document provides a recipe for Bregovska pita, an 8-layer filo pie that is part of Croatia's intangible cultural heritage. The recipe calls for layers of filo dough with fillings including apples, walnuts, raisins, sugar, cinnamon, and butter between each layer. The pie is baked for 45 minutes at 200C, cooled, cut into cubes, and sprinkled with powdered sugar. Bregovska pita is a 200-year-old holiday tradition in Koprivnički Bregi, Croatia, with the recipe passed down through generations. In 2012, it was officially recognized as part of Croatia's intangible cultural heritage.
2. Dough:
40 dg smooth flour
a pinch of salt
4 tablespoons of butter
1 egg
lukewarm water if necesarry
Knead smooth dough and divide into 8 balls to make
8 layers and leave it to rest for about half hour.
3. Filling:
20 dg ground walnuts
25 dg raisins
40 dg sugar
little bit of cinnamon
20 dg melted butter
8-9 sour apples – peeled and cut into thin slices.
2 dcl cream mixed with one whole egg
Grease the pan with butter and put in thinly
stretched
4. 1 layer of dough - put the apple slices on it, sprinkle
with sugar and cinnamon, pour with 3 tablespoons
melted butter.Then put
2 layer - sprinkle with walnuts, sugar, pour with
melted butter and sprinkle with cream.
3 layer - sprinkle with raisins, sugar, pour with
butter and sprinkle with cream
5. 4 layer- all over again - apples, sugar, cinnamon and
butter
5 layer - walnuts,sugar,melted butter and cream
6 layer - raisins, sugar, butter and cream
7 layer - apples, sugar, cinnamon and butter
8 layer - put the dough on the top and cover it
with cream
6. Before baking pierce the top layer with a fork in
several places. Put the pie to bake on 2000C for
about 45 minutes.When it is baked, leave it to cool
down a bit, cut into cubes and sprinkle with
powdered sugar.
7. Bregovska pita - intangible
cultural heritage of
Croatia
There is a 200 year-old holiday tradition in
Koprivnički Bregi. Each Christmas, Ester and Saint
Roch Day (16 August) a special cake Bregovska pita
is prepared. Nowadays it is still prepared following
the old recipe which is typical for this village. The
recipe has been passed down from generation to
generation among women in families by word of
mouth.
8. On 29 May 2012 Croatian Ministry of
Culture brought a resolution according which
Bregovska pita is now placed on the list of
Croatian intangible cultural heritage.
