    Ajowan

    Ajwain (carom seeds) nutrition facts
    Strongly pungent and aromatic, ajwain seeds are one of the popular spices commonly feature in
    Indian and Middle-Eastern cuisines. Botanically, the spicy seeds belong to the family of apiaceae
    (umbelliferae), of the genus, Trachyspermum. Scientific name: Trachyspermum copticum.
    The umbellifers are the members of carrot or parsley family, which includes many herbs and spices
    such as dill, fennel, anise seed, and caraway. Some of common names for the seeds are ajowan
    seeds, carom seeds etc.
    Health benefits of Ajwain
•   Ajwain seeds contain many health benefiting essential oils such as thymol, a monopterone derivative

    cymene, limonene and terpinene.

    Anise

    Anise is plant that grows up to eighteen inches in height; it is a popular culinary herb that is used
    extensively as a flavoring in different dishes. It is mostly used for dishes that have a touch of
    sweetness or a bit of spice. Its flowers are small, yellowish white, whereas the leaves are feather
    shaped. The fruit of anise is flat, oval seeds and grayish to brown in color. It is this part that has a
    wide variety of medicinal as well as culinary uses.
    Nutrient content: The vitamins, the B complex (B1, B2), C, calcium, phosphorus, potassium,
    sulphur, iron, aromatic essences.
    Medicinal Benefits:

    Scientific Name: Ferula Assa-Foetida, Umbelliferae
    Botanical name: Ferula asafoetida

    Family name: Apiaceae Oleogum
    Asafoetida is an herbal medicine used to treat nervousness, bronchitis, and gas pain. Other names for
    Asafoetida include: Ferula foetida, Devil's Dung, and Giant Fennel. Asafoetida is a species of Ferula
native to Iran. It is a herbaceous perennial plant growing to 2 m tall, with stout, hollow, somewhat
    succulent stems 5-8 cm diameter at the base of the plant. Asafoetida is the dried latex exuded from
    the living underground rhizome or tap root of several species of Ferula , which is a perennial herb..
    The leaves are 30-40 cm long, tripinnate or even more finely divided, with a stout basal sheath
    clasping the stem. The flowers are yellow, produced in large compound umbels. There are two main
    varieties of asafoetida. Milky white asafoetida and Red asafoetida. Asafoetida is acrid and bitter in
    taste and emits a strong disagreeable pungent odour due to the presence of sulphur compounds
    therein.
    Asafoetida, also known as Narthex or Hing. Recognized by its overwhelming odor which has given rise
    to at least one of its many popular names, "devil's dung".Asafoetida powder is a crucial ingredient in
    Indian vegetarian cooking.

    peppercorns.

    Clove oil has become so popular just because of its stimulating, invigorating, and antidepressant

    for the benefit of digestive system; antiarthritic properties for the benefit of skeleton system; and
anti-infective properties for the benefit of respiratory and dermatological system. Besides this, clove
    oil is good for immune system as it combats infection and maintains immunity against infection
    diseases. Clove oil has been famous for its strong aroma and spicy flavor that when applied for
    aromatherapy purposes gets deeply penetrated inside the body parts killing the infection and curing
    the disease at the same time. Cloves are not new and they have been used and appreciated since
    ancient times as a tasty spice in food adding flavor to our favorite dishes.

    The scientific name for clove is Eugenia caryophyllus. Cloves belong to the family of Myrtle or
    Myrtaceae dicotyledon plants.
    The basic element of the fruit is situated below the flower and not in its womb so when it reaches full
    maturity, the calyx becomes the crown.



    Natural and Alternative Health
    Clove’s name comes from Latin word “clavus”. For many centuries, the clove tree has been used in
    traditional medicine for treatment of various medical ailments. It had been so much famous and
    prestigious that people of Spice Islands or island of the moluccas planted one clove plant to celebrate
    the birth of each and every child. It was believed by them that if the tree will flourish, it is auspicious
    for the baby who always wore a necklace made up of cloves as a protection against disease and evil
    spirits. Also, the medicinal values of clove have been popular among Romans, Greeks, and Chinese.
    They also used to chew raw clove to fight bad breath and applied clove oil to the affected tooth for
    relieving chronic toothache.
    Cloves have been used by ancient naturopathics as an antiseptic and they also used clove oil to
    prevent infectious diseases. It is also believed that when Dutchmen cut the clove in the island of
    Moluccas, many epidemics occurred there. Then, the clove became popular and an important spice
    imported by French and Portuguese. At that time, clove became also popular in India due to its special
    digestive properties and spicy aroma. Nowadays, clove is used at a large scale for pharmaceutical and
    cosmetic purposes as an antiseptic and bactericidal mainly in the form of clove oil, clove toothpaste,
    and clove mouthwash.



    Nutmeg


    Nutmeg is the actual seed of the nutmeg tree. This is the only tropical fruit that is the source of two
    different spices (nutmeg and mace). Nutmeg and mace have similar taste qualities, but mace has a
    stronger flavor. The nutmeg seed is encased in a mottled yellow, edible fruit, the approximate size
    and shape of a small peach. The fruit splits in half to reveal a net-like, bright red covering over the
    seed. This is the aril which is collected, dried and sold as mace. Under the aril is a dark shiny nut-like
    pit, and inside that is the oval shaped seed which is the nutmeg. Nutmegs are usually sold without the
    mace or hard shell. Nutmeg is sold whole or ground, and is labeled as ‘East Indian' or ‘West Indian'
    indicating its source. Nutmeg is not a nut and does not pose a risk to people with nut allergies. Allergy
    to nutmeg does occur, but seems to be rather rare.

•   Medicinal Properties: Sedative, stimulant, relaxant, anti inflammatory, antiseptic, bactericide, etc.
•   Culinary Uses: Nutmeg is used in sweet and spicy dishes like pies, custard, cookies spice cakes,
    cheese sauces, soups, egg and vegetables dishes. Mace is often preferred in light-colored dishes for
    the bright orange, saffron-like color it imparts.
•   Nutmeg Seed: It is roughly egg-shaped, about 20mm to 30 mm (1inch) long and 15 mm to 18 mm
    (3/4 inch) wide, and weighing between 5g and 10g (1/4 ounce and ½ ounce)
•   Nutmeg oil: Essential oil of nutmeg is obtained by steam distillation of ground nutmeg. The oil is
    colorless or light yellow and smell and taste like nutmeg. This oil is used in perfume, cosmetic and
    pharmaceutical industries, it is also used as a natural food flavoring in baked goods, syrups, and
    beverages.
•   Nutmeg butter: Butter is obtained from the nut by expression. It is semi-solid, reddish brown in
    color, and has the tastes and smells of nutmeg.

    Medicinal Benefits:

•   Nutmeg oil is potent brain booster, increasing circulation and allowing you to concentrate better. It
    also works by stimulating the brain and therefore removes mental exhaustion and stress.
•   Nutmeg oil also stimulates the cardiovascular system and therefore is a good tonic for the heart.
•   Nutmeg is an effective liver and kidney detoxifier.
•   Nutmeg powder heated on the pan with sesame oil until brown is an effective external application to
    relieve any rheumatic pain, neuralgia and sciatica. The oil should be cooled and strained before
    application. Nutmeg oil is also effective in treating menstrual cramps, muscular and joint pain as it is
    an excellent sedative.
•   Nutmeg can help clear up congestion due to colds, this is the reason why it is used in many cough
    syrups.
•   Nutmeg powder (about 5 to 15 grams), mixed with apple juice or banana, is used as a specific remedy
    for diarrhea caused by indigestion.
•   A regular massage of the abdomen with nutmeg oil, three weeks before delivery is believed to be very
    helpful for child birth.
•   Nutmeg paste mixed with honey is given to infants who cry at night for no apparent reason, to induce
    sleep.
•   Nutmeg oil or powder mixed with a half-boiled egg and honey, makes an excellent sex tonic.
•   Nutmeg oil helps in removing bad breath. It is also antiseptic in nature and is effective for toothaches
    and aching gums.


    Saffron
    Saffron is one of the highly prized spices known since antiquity for its color, flavor and medicinal
    properties. It is the dried "stigma" or threads of the flower of the S. crocus plant. The plant is a
    bulbous perennial plant that belongs to the family of iridaceae of the genus, Crocus and known
    botanically as Crocus sativus.
    This exotic spice is a native of Southern Europe and now cultivated worldwide in many countries,
    particularly in Spain, Italy, France, Greece, Turkey, and Iran and in Jammu & Kashmir state of India.
    Health benefits of Saffron
•   Saffron contains many plant derived chemical compounds that are known to have anti-oxidant,
    disease preventing and health promoting properties.
•   The flower stigma are composed of many essential volatile oils but the most important being
    safranal, which gives saffron its distinct hay-like flavor. Other volatile oils in saffron are 3,5,5-
    trimethyl-4-hydroxy-1-cyclohexanone-2-ene, cineole, phenethenol, pinene, borneol, geraniol,

    seeds are similar to fennel and anise seeds in appearance, but are smaller and darker in color, like
    anise seed it also has a distinct flavor and aroma. This strong, aromatic flavor is what makes cumin a
    popular seasoning in many dishes around the world. It is traditionally added to curries, enchiladas,
    tacos, and other Middle-Eastern, Indian, Cuban and Mexican-style foods. Cumin has also been used on
    meat in addition to other common seasonings. Before grounding, cumin seeds are often heated first

  • 1. Spices/Raw Spices Ajowan Ajwain (carom seeds) nutrition facts Strongly pungent and aromatic, ajwain seeds are one of the popular spices commonly feature in Indian and Middle-Eastern cuisines. Botanically, the spicy seeds belong to the family of apiaceae (umbelliferae), of the genus, Trachyspermum. Scientific name: Trachyspermum copticum. The umbellifers are the members of carrot or parsley family, which includes many herbs and spices such as dill, fennel, anise seed, and caraway. Some of common names for the seeds are ajowan seeds, carom seeds etc. Health benefits of Ajwain • Ajwain seeds contain many health benefiting essential oils such as thymol, a monopterone derivative class of chemical compound, which gives aromatic fragrances to seeds. It also contains -pinene, cymene, limonene and terpinene. • The active principles in the ajwain may help increase the digestive function of the intestinal tract by increasing gut juices (gastro-intestinal secretions). • Thymol, the essential oil obtained from ajwain has local anaesthetic and anti-bacterial and antifungal properties • Like caraway, ajowan seeds are rich in fiber, minerals, vitamins, and anti-oxidants. Medicinal uses • Ajwain seeds have long been used in traditional ayurvedic and unani medicines for various ailments. Extraction obtained from this spice sometimes used as carminative in treating flatulence and indigestion. • Thymol's germicide and antiseptic properties utilized in many cough remedies. In India, the seeds are used to ease asthma. • Ajwain seed oil has highest percentage of thymol. Culinary uses Ajwain seeds mainly feature in savory Indian, Pakistani, and Middle-Eastern cooking. In order to keep the fragrance and flavor intact, ajowan seeds generally crushed just before preparing dishes and added to the cooking recipes at final stages. This is because prolonged cooking results in evaporation of essential oils. • In Punjab province of India and Pakistan, the spice seeds particularly added to make bread known as ajwain paratha. • Some Indian vegetarian bean/lentil and chicken/fish curries contain this spice and in the Middle-East, it is used to flavor meat and rice dishes. • The seeds generously used in snacks, spicy biscuits, to flavor drinks, soups, sauces in India. • They also used in pickling along with fenugreek, mustard seeds, turmeric etc. Anise • Scientific name: Pimpinella anisum

It is mostly used for dishes that have a touch of sweetness or a bit of spice. Its flowers are small, yellowish white, whereas the leaves are feather shaped. The fruit of anise is flat, oval seeds and grayish to brown in color. It is this part that has a wide variety of medicinal as well as culinary uses. Nutrient content: The vitamins, the B complex (B1, B2), C, calcium, phosphorus, potassium, sulphur, iron, aromatic essences. Medicinal Benefits: • Anise has long been known as an aphrodisiac. • Anise tea aids digestion, it is also helpful for problems like flatulence, colic and bloating that comes from gas. Drink a 1 cup after meal. • Anise can help relieve menstrual cramps. • Anise seed can help to stimulate the pancreas, it is responsible for regulating insulin and some hormones. The seeds are also added to oral hygiene products like toothpaste and mouthwash in order to enhance their flavor and effectiveness. Asofoetida Asafoetida - Uses and Benefits Scientific Name: Ferula Assa-Foetida, Umbelliferae Botanical name: Ferula asafoetida Family name: Apiaceae Oleogum Asafoetida is an herbal medicine used to treat nervousness, bronchitis, and gas pain. Other names for Asafoetida include: Ferula foetida, Devil's Dung, and Giant Fennel. Asafoetida is a species of Ferula
  • 3. native to Iran. It is a herbaceous perennial plant growing to 2 m tall, with stout, hollow, somewhat succulent stems 5-8 cm diameter at the base of the plant. Asafoetida is the dried latex exuded from the living underground rhizome or tap root of several species of Ferula , which is a perennial herb.. The leaves are 30-40 cm long, tripinnate or even more finely divided, with a stout basal sheath clasping the stem. The flowers are yellow, produced in large compound umbels. There are two main varieties of asafoetida. Milky white asafoetida and Red asafoetida. Asafoetida is acrid and bitter in taste and emits a strong disagreeable pungent odour due to the presence of sulphur compounds therein. Asafoetida, also known as Narthex or Hing. Recognized by its overwhelming odor which has given rise to at least one of its many popular names, "devil's dung".Asafoetida powder is a crucial ingredient in Indian vegetarian cooking. Side Effects of Asafoetida:- You may have the following side effects, but this medicine may also cause other side effects.
