- 1 head of cauliflower
- 2 tablespoons of coconut oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 2 eggs
- 1/2 cup of frozen peas and carrots
- 2 tablespoons of soy sauce
- Salt and pepper to taste
Instructions:
1. Cut the cauliflower into small florets and pulse in a food processor until it resembles rice.
2. Heat the coconut oil in a large skillet over medium heat. Add the onion, garlic, and ginger and
cook until softened.
3. Add the cauliflower rice to the skillet and cook for 5-7 minutes until it has softened.
4. Push the cauliflower rice to one side of the skillet and crack the eggs into the other side.
Scramble the eggs until cooked.
5. Add the frozen peas and carrots to the skillet and cook for another 3-4 minutes.
6. Stir in the soy sauce and season with salt and pepper to taste.

2. Add cocoa powder, powdered erythritol, and salt to the saucepan and whisk together until
smooth.
3. Line a muffin tin with paper liners and pour a small amount of the chocolate mixture into each
liner.
4. Place the muffin tin in the freezer for 5-10 minutes until the chocolate has hardened.
5. Spoon a small amount of peanut butter onto each chocolate cup and top with more of the
chocolate mixture.
6. Place the muffin tin back in the freezer for another 10-15 minutes until the cups are
completely hardened. Serve chilled.
