Carrying out general store operations during scheduled shifts, including opening and closing duties as
assigned for 3 individual cafes, 2 bakeries and traditional English Pub, all situated next to London’s top
tourist attractions (London Eye, Sea Life, London Dungeon, Shrek Adventures).
 Responsible for 2 duty managers, for an assistant manager a head baker, and also a chef
and 6 supervisors, and 40 staff members, ensuring they have the necessary skills to
perform the duties to the standards required by the company with a turnover of £4.5
million per annum.
 Effectively prepared weekly staff and management roster according to the business
needs, managing holiday scheduling of the team, recruitment and staff inductions,
conducting staff training and maintaining records and preparing the monthly payroll.
 Responsible for Cash Floats, Petty cash, Banking and Bulk cash.
 Negotiating local and national suppliers decreasing food cost by 4% in two years,
Sponsorship agreement with Coca Cola Enterprises Ltd., with Marston’s Beer and Pub
Company, and with Heineken (during 2012 Olympics), aggressively cutting overhead
costs including labor by 3%
 P&L Management of all revenue streams, achieving significant improvements in
turnover, profitability and reporting.
 Opening new stores
 Reporting directly to the owner, and to the directors.
 Stock Control/Monthly and Weekly Stock Take, Sales figures, Health and Safety audits,
local area marketing, and menu changes and till programming.
