25 lbs over weight again… Ahhh… why me. Sounds like a lot of people I know every year, around this
time. Why you ask? Simple… Processed high sugar f ood, the devil is in the sugar.
Let me give you an example..Cookies, baked goods, candy, holiday treats etc…etc.. It’s about time to
f ix all of that. Healthy eating during the holidays is not hard. And in f act, is really f un and easy, I mean
really f un.
What if I told you, eggnog, butter, turkey, and some wine is healthy, do I have your attention now
Now set back, relax and enjoy today’s episode with Dr. Kaayla T Daniel.
Healthy eating during the holidays with Dr Kaayla T Daniel
Dr. Kaayla f irst tip f or healthy eating during the holidays is making Natural Eggnog.
# 1 Dairy-Free Eggnog
1 can f ull f at coconut milk
1 cup almond milk
3-4 egg yolks
1 tsp vanilla extract
¼ cup maple syrup or sugar of choice
½ tsp ground cinnamon
½ f reshly grated nutmeg (ground will do but not pref erable)
1/8 tsp ground allspice
Spirits of your choice
Raw Dairy Eggnog
Ingredient s
Raw whole milk (2 cups)
Cream, ideally raw & f rom grass-f ed cows, at the very least not ultrapasteurized (2 cups)
2. Large egg yolks (pastured or at least f ree-range organic) (8)
Raw honey or Grade B maple syrup (1/4 cup)
Vanilla extract, organic if possible and make sure to avoid ‘artif icial’ (1 tsp)
Freshly grated nutmeg ,you can also use dried ground nutmeg.
Optional: Good Kentucky Bourbon or rum (Note: disilled liquor is not good for you but once or twice a year can’t
hurt too much)
Equipment
Nutmeg grinder, if using f resh
Blender or f ood processor
Direct ions
1. Blend the milk, cream, eggs, honey and vanilla in blender or f ood processor until smooth.
2. Pour into glasses. Add Bourbon or rum if you desire.
3. Grate f resh nutmeg over each glass.
Put all ingredients in a blender and blend until incorporated, about 20 seconds. Serve with a sprinkle of f reshly
grated nutmeg.

3. # 2 Use Grass f ed butter
Dr Kaayla, states that when you use Grass f ed butter, the saturated f ats, satiated you quicker and control
your blood sugar levels. which ROCKS! Also High-f at dairy products f rom grass-f ed cows are among the best
sources of Vitamin K2 in the diet
Vitamin K works by modif ying proteins, giving them the ability to bind calcium ions. For this reason, it af f ects all
sorts of f unctions related to calcium metabolism.
# 3 Cook a classic ancestral Turkey Dish
Ingredients For Stuf f ing:
1 pound ground pork
1 onion, chopped
1 green bell pepper, chopped
2 packs of button mushrooms, chopped
1 cup celery, chopped
4-6 cloves of garlic, minced
2 tablespoons each, rosemary, thyme, and sage, minced
Salt and pepper to taste
2 tsp each, f ennel seeds, anise, and paprika
1/2 tsp cayenne pepper
1 tsp coconut oil
**Note: Adjust stuf f ing measurements accordingly depending on amount of people being served. T his stuf f ing
f illed a 16 lb turkey, as well as a 5 qt braising pan.
Process For Stuffing:
1. Heat coconut oil in a large skillet on medium heat.
2. Place bell pepper, mushrooms, and celery into skillet and saute.
3. In a large mixing bowl, combine ground pork, onion, garlic, rosemary, thyme, sage, f ennel seeds, anise,
paprika, cayenne, salt, and pepper.
4. Add ground pork mixture to skillet, and cook until pork is browned slightly.
5. Remove f rom heat, and discard any liquid in the pan.
4. Ingredients for Turkey:
1 pastured turkey
Duck f at
Salt and pepper
To prep, stuf f and cook the turkey:
1. Preheat oven to 325.
2. Place turkey in a roasting pan.
3. Season turkey with salt and pepper, including the body cavity.
4. Stuf f turkey with pork stuf f ing.
5. Place any remaining stuf f ing into a baking dish, cover and place in the f ridge.
6. Rub turkey with duck f at.
7. Tuck wings under the breast, and tie the legs together with kitchen twine.
8. Tent turkey with aluminum f oil, and place in the oven.
9. Roast turkey 20 minutes per pound at 325 degrees, this will be about 5 hours f or a 16 lb turkey.
10. Place outside stuf f ing in the oven, uncovered f or the last 20-30 minutes of cooking, or until the stuf f ing
is crispy on the tops, and the pork is cooked through.
