The Dirty Olive Café has an all day menu with
all of America’s favorites. From house made
pasta, to the highest quality barbeque. And all
of our dishes are done in the most wholesome
fashion, while served with the most effective
kindness.
And to insure you receive the greatest food on
earth, we have brought Chef Ross Essner to Las
Vegas from his hometown of Philadelphia,
where he made a cherished name for himself.
And now, Chef Ross Essner has chosen to bless
the Las Vegas Strip with his culinary delights.
Not only will your food be cooked to perfection,
but it will also be plated in the most beautiful
and hungering manner. So belly up to the bar,
or kick back in the lounge, cause no matter

where you sit, Chef Ross Essner will be helping
you enjoy your time with us.
And to help Chef Ross Essner maintain his high
level of expertise and energy, we have brought
Chef de Cuisine, Anthony Velazquez, back to
Las Vegas as well; and from his current home in
Miami Beach Florida. Chef Anthony never has
anything but love for his work. And all you
gotta do with Chef Anthony is cut him lose, and
watch him create; Chef Anthony will stop at
nothing to ensure you have the greatest
culinary experience of your life.
And yet again, they will not be doing it alone.

Dirty Olive Lounge
Sun–Thr: 9pm – 3am
The Dirty Olive Lounge will be
serving an exceptional array of small
plates from 9pm‐2am daily. Chef de
Cuisine Tony, and Executive Chef
Ross, have pulled out all of the stops
for these extremely explosive small
plates.
But I warn you, once you have had
one of the small plates, you won’t
stop until you’ve had them all, and
then you won’t stop coming back.
And I caution you, for our menus
change with the seasons, so once
you think you’ve had it all, you will
think again.
Now, don’t forget to take a chance
on one of our 15 gaming machines
located at our three different bars.
We keep them loose and friendly, a
lot like the sex workers you’ll find in
our lovely yellow pages (hundreds of
lovely yellow pages).
And to help make all of these
hospitality elements come together,
we have garnered the support of a
couple of Las Vegas’s greatest
restaurateurs!

separate kitchens.
They are responsible for the
foodservice coming out of the
Eclipse Café, and the Dirty Olive
Café & Lounge (which serves
breakfast, lunch, dinner, and late‐
night small plates).

The Lounge Mgt. Company will be
responsible for doormen, cocktail
waitresses, bartenders, hostesses,
and entertainment; but only
during lounge operating hours.
The bussers and foodrunners will

2am nightly).
