Specialty Cakes
* are made of high quality ingredients and are not
different from usual cakes offered during birthdays and
other special occasions;
* usually included in the menu of restaurants and shops;
* are served in desert plates artistically and elaboratively.
Basic Types of Specialty Cakes
1. Gâteaux
- Originated in France
- Made of light sponge cake with rich fillings
- Has 2 layers: The base is made of light sponge cake and on
top of it is a buttercream with cream cheese and fruit
toppings
Take Note!!
* A finished gateaux should not be
higher than 5 cm without
decorations
* It has a maximum of three layers
of sponge and two layers of
fillings
* The sponge should be moistened
with flavored sugar.
* Create a decoration that depicts
the filling of the gateaux.
Basic Types of Specialty Cakes
2. Torte/Torten
- Originated in Germany
- with no or little flour
involves the use of nuts or bread crumbs that are mixed together
with the filling
-filled with rich whipped cream, buttercream, mousses, fruits,
jams, or icing
Take Note!!!
* The bottom layer is made up
of bread crumbs with nuts.
* The middle layer has three
different layers of cream:
chocolate, strawberry, and
whipped cream.
* The upper layer consists of
fruits and other toppings for
decoration.
