1. Fortification of foods Products such as breakfast cereals, some drinking water and margarines are fortified. This simply means that they have added vitamins and minerals. Some manufacturers fortify foods to increase the nutritional content. Sometimes this fortification can help prevent a deficiency in certain areas (especially less developed areas) Other manufacturers may see this as a good selling point, enticing you to choose their brand over another. Sometimes they add extra vitamins and minerals to replace the ones lost in processing, for example some vitamin C can be lost in a concentrated orange juice compared to fresh orange juice – so they may add extra vitamin C to the concentrated one. If a product IS fortified it must state it clearly.
