1. Fruits and Vegetables
Fruits and vegetables are part of a healthy diet as both provide several minerals
and vitamins. Fruits and vegetables are great as a snack or can also be incorporated in a
meal. The serving size for fruit is on medium piece of fruit, ½ cup canned or cut fruit,
and ½ cup fruit juice. The serving size for vegetables is ½ cup for raw or cooked
vegetables and 1 cup for raw leafy green vegetables. Below are recipes from Dole that
include fruits and vegetables.
Strawberry Toast
Makes: 8 servings| Prep Time:20 min. | Cook Time: 10 min.
Ingredients:
2/3 cup part-skim ricotta cheese
1 DOLE® Banana, peeled
1-1/2 teaspoons grated lemon peel
1/2 teaspoon honey
8 toasted whole grain baguette slices
1-1/4 cups sliced DOLE Strawberries
1 cup DOLE Spring Mix
1-1/2 tablespoons Honey Balsamic Dressing (see below)
1 tablespoon sliced almonds
Directions:
1. Combine together ricotta cheese and banana. Stir in grated lemon peel and honey.
2. Spread ricotta mixture over toasted baguette slices and shingle sliced strawberries on top.
3. Tuck several spring mix greens under strawberry slices, securing them on the toast.
4. Drizzle with honey balsamic dressing and sprinkle with sliced almonds.
Honey Balsamic Dressing: Whisk together 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1
teaspoon honey and 1 teaspoon chopped DOLE Green Onion. Season to taste with salt and pepper.
2. Crunchy Vegetable Burritos Banditos
Makes: 4 servings| Prep Time:20 min. | Cook Time: 15 min.
Ingredients:
½ cup DOLE® Shredded Carrots
½ cup DOLE Broccoli chopped
½ cup DOLE Cauliflower, chopped
2 DOLE Green Onions, thinly sliced
1 cup (4oz) low fat cheddar cheese, shredded
¼ cup fat free ranch salad dressing
½ teaspoon chili powder
4 flour tortillas (7-inch)
1 cup, torn, bite-size pieces DOLE Iceberg Lettuce
Directions:
1. Grate the carrots and cut the broccoli, cauliflower and green onions.
2. In a mixing bowl, combine carrots, broccoli, cauliflower and onions with cheese, dressing, and chili
powder.
3. Lay tortillas flat on the counter and spoon about 1/2 cup vegetable mixture and 1/4 cup lettuce down
center. Wrap each tortilla around vegetable mixture.
Easy Cheesy Vegetable Lasagna
Makes: 6 servings| Prep Time: 15 min. | Cook Time: 55 min.
Ingredients:
1 cup part skim ricotta cheese
¼ cup DOLE® Green Onions, washed, trimmed, and sliced
3. 3 medium zucchini trimmed, into 1/4-inch thick "coins"
2 cups light tomato basil sauce, divided into thirds
4 uncooked lasagna noodles
1 cup canned corn, drained
2/3 cup shredded mozzarella cheese
2 cups DOLE Baby Spinach
2 tablespoons grated Parmesan cheese
Directions:
1. Preheat oven to 375ºF. Spray 9-inch square baking dish with nonstick cooking spray.
2. Combine ricotta cheese and green onions in mixing bowl.
3. Cook zucchini slices over medium-high heat in skillet sprayed with nonstick cooking spray until lightly
brown on both sides, about 2 to 3 minutes each.
4. Layer lasagna by first spooning one-third of the tomato sauce into the bottom of the baking dish. Top
with 2 lasagna noodles.
5. Arrange half of the zucchini slices over the noodles. Sprinkle with all of the corn and half of the
mozzarella cheese.
6. Next, arrange the spinach leaves over the cheese, then spoon one-third of the sauce over spinach,
add the remaining zucchini, and then cover with all of the ricotta cheese mixture.
7. Top with remaining 2 lasagna noodles, remaining one-third of sauce, and remaining half of the
mozzarella cheese. Sprinkle top with Parmesan cheese.
8. Cover pan with aluminum foil, and bake for 35 to 40 minutes. Remove from oven and allow to cool for
10 to 15 minutes before cutting into six pieces.
Chocolate Brownie Fruit Pizza
Makes: 10-12servings| Prep Time: 20 min.| Cook Time: 30 min.
Ingredients:
1 box brownie mix
4 oz cream cheese, softened
1/3 cup hot fudge ice cream topping
¼ cup powdered sugar
1 teaspoon vanilla extract
1 to 2 teaspoons water
1-1/2 cup sliced strawberries, raspberries, or blueberries
2 banana(s), peeled, sliced
strawberry ice cream and chocolate sauce ice cream toppings
4. Directions:
1. Prepare brownie mix according to package directions. Spread batter in a 10-inch round cake pan.
Bake at 350F 20 to 25 minutes, or until toothpick comes out almost clean. Cool completely in pan on
wire rack.
2. Beat cream cheese with chocolate topping, sugar and vanilla until smooth. Add water, if necessary,
for spreading consistency. Spread mixture over cooled brownie crust.
3. Arrange berries and banana slices over filling. Drizzle strawberry and chocolate ice cream topping
over fruit. Cut into wedges.
