The
RiceWrap
Story
RiceWrap Foods was formed out of
the passionate search for quality
frozen sushi.
Owner and founder Richard Cronk sought to
manage high overhead and costs associated with
on-site sushi chef operations in his rural upscale
restaurants. He sampled product from companies
that sold pre-prepared, frozen sushi rolls. Although
the product proved to be convenient and
reasonably priced, the taste and texture, upon
thawing, did not deliver palatable sushi rice. It was
within this product vacuum that RiceWrap was
founded.
Two years of research, experimentation and product
development ensued, by Cronk, his son Kyle and
“professional taste tester” Ken Maruyama. Their
efforts resulted in the creation of RiceWrap’s platform
technology of frozen sushi rice. This unique blend of
natural ingredients and procedure yielded, upon
standard thawing techniques, an exceptional quality
of taste and texture. The attributes of fresh sushi rice,
including the slight “bounce back” and perceptible
individual rice kernel, coupled with the convenience
of a frozen product was realized. On December 17th
2011, application was made for a Patent on this
applied science.
The groundbreaking importance of freezing sushi
and being able to thaw with no deleterious effects
is referenced in an article by Mr. Graeme Glen in
AMEFT (Asia & Middle East Food Trade Journal):
“For years, the ‘holy grail’ of the sushi business has
been to develop the technology to freeze it…frozen,
stored, and defrosted with no discernible side
effects…comes out of the freezer as fresh as it went
in… no special defrosting equipment… entirely
natural.”
With an eye for nutrition and the desire to create a
healthy line of products, RiceWrap production of
their first frozen Fusion Rolls with perfect rice began.
While RiceWrap was Beta testing product in numerous
venues they met with a west coast venture capitalist of
Asian heritage. Knowledgeable of rice and sushi and
with a global network and perspective, he and his
colleagues joined Company principals for a tasting of
the product line and a roundtable visit.
Their consensus: “RiceWrap will be DISRUPTIVE in the
food industry.” Their conclusion was driven by taste and
texture, and what they felt would be the product’s
impact on customers and consumers…all driven by
RiceWrap’s proprietary technology.
RiceWrap Krisps™, an appetizer line, were created with
three markets in mind;

The Krisps™ were developed using Coats™ Double
Toasted Crunchy Panko covering of RiceWrap’s tasty
rice, with natural flavorings. The result: delicious,
healthy, low fat, low calorie, “New Appetizer” with a
serious crunch. Breaded for frying, as well as a Heat-n-
Serve Krisp, offer flexibility regardless of venue.
Rounding out the frozen RiceWrap line of products,
appropriately, are the Rice Shapes. These two offerings,
pre-formed Rice Pillows for nigiri toppings and the Slice
of Rice™, are the ultimate testaments to RiceWrap’s
cutting edge technology. Considered “the sliced
bread of the rice world”, Slice of Rice™ is designed for
home and venue chefs as a “roll your own” product.

saving convenience and ease of use.

Ingredients
RiceWrap ingredients have and always will be, sourced with an eye to create the
healthiest and freshest rice based product line available. Our cutting edge
concern, which is ahead of the trend, is to provide seasoned sushi rice with no
cane sugars. Currently, five of our seven offers are Vegan and Gluten Free!
Our rice utilizes only organic rice vinegar, is Gluten Free, with no cane sugars and
low sodium, no fat, no cholesterol, no artificial colorings or flavors and no
preservatives. Unique to the sushi rice world, ours is diabetic and tooth friendly.
Consistency
RiceWrap Foods was created to fill the void of not only a frozen rice product that
when placed into service had excellent fresh taste and texture, but also the void in
a consistent sushi Fusion Roll.
From the exact amount of filtered water to wash the rice, to the amount of time to
absorb the water, to the level of water to cook the rice, to the intricacies of timely

Food Safety & Packaging
RiceWrap Foods operates in accordance to Seafood HAACP rules, plan and
regulation. On site are procedural reminders and checklists before production is
begun, during production and end of shift clean up. We source all ingredients and
packaging only from the most trusted names, which in turn, provide us with their
health standards.
We stress safety and personal hygiene requirements with all employees, who are
vetted with thorough background checks. We are a "Drug Free Facility".
RiceWrap does not utilize raw fish and with the exception of certain spices and
natural flavorings, all products are cooked prior to assemblage and freezing.
