1. “RICE WITH MEAT" KABSAH
Prep. Time: 15 Minutes Cooking time : 2 1/2 hours Directions:
Serving : 10-12 Wash the rice and soak it in warm water for 15 – 20
Ingredients: minutes.
4 Cups of Zafarani Basmati Rice Heat the oil in a large saucepan. Add the onion, garlic
4 Tablespoons of Oil or shortening and meat, and then cook it until brown on both sides.
4 Large Onions, halved and sliced
Add the water, tomatoes and spices to the meat. Heat it
4 Small Garlic cloves, crushed
2 Kg of Lamb leg or shoulder meat to boiling, then cook it gently over medium heat for 2
4 Large Tomatoes, peeled, seeded and chopped hours or until the meat is tender.
½ Teaspoon of Ground turmeric Strain the stock and add more water to equal 7 cups. In
1 Teaspoon of Fresh ginger, minced a large pot add the meat pieces and tomato paste and
2 Cups of Mixed vegetables, frozen bring to boil. Then add the rice. Stir well, cover and
1 Stick of Cinnamon simmer on low heat for 30 – 40 minutes.
8 Pieces of Whole cloves Serve the rice in a large platter. Place the meat on the
1 cup of Chicken stock or water, hot top. Garnish with nuts.
½ Cup of Raisins
