Zafarani Basmati Rice with Meat Kabsah

  1. 1. “RICE WITH MEAT" KABSAHPrep. Time: 15 Minutes Cooking time : 2 1/2 hours Directions:Serving : 10-12 Wash the rice and soak it in warm water for 15 – 20Ingredients: minutes.4 Cups of Zafarani Basmati Rice Heat the oil in a large saucepan. Add the onion, garlic4 Tablespoons of Oil or shortening and meat, and then cook it until brown on both sides.4 Large Onions, halved and sliced Add the water, tomatoes and spices to the meat. Heat it4 Small Garlic cloves, crushed2 Kg of Lamb leg or shoulder meat to boiling, then cook it gently over medium heat for 24 Large Tomatoes, peeled, seeded and chopped hours or until the meat is tender.½ Teaspoon of Ground turmeric Strain the stock and add more water to equal 7 cups. In1 Teaspoon of Fresh ginger, minced a large pot add the meat pieces and tomato paste and2 Cups of Mixed vegetables, frozen bring to boil. Then add the rice. Stir well, cover and1 Stick of Cinnamon simmer on low heat for 30 – 40 minutes.8 Pieces of Whole cloves Serve the rice in a large platter. Place the meat on the1 cup of Chicken stock or water, hot top. Garnish with nuts.½ Cup of Raisins
