Healthy Desserts
Desserts, healthy? Some people are quick to think that these two are like oil and
water and never the two shall meet. This is because the sweet course taken after
meals is oftentimes associated with sugar and fat, indulgence and weight gain.
For those who seem to be tied up with this preconception, they simply skip it but
sometimes make up for it by eating more of the main course or snack on junk
food in between meals.




One thing that makes desserts potentially unhealthy is the excessive amount of
refined sugar that is used to prepare it. However, there are a lot of sugar
substitutes in the market, artificial and natural, that are able to sweeten without
the calories and high-glycemic index. Low-glycemic foods and sweeteners do not
rapidly elevate a person’s blood sugar which can have a harmful even life
threatening impact on diabetics.
Once again, it seems that mankind has advanced too much in the pursuit of
satisfying the sweet tooth without the weight gain. Big companies have managed
to create intensely sweet substances from chemicals or modify naturally occurring
substances so much that they lost virtually all nutrients present.

Go online and you’ll be surprised to see that a lot of synthetic artificial
sweeteners which were the craze just a few years ago are now being suspected as
potentially harmful. Not surprising considering how these are manufactured.

Fortunately, natural sweeteners that are both low-glycemic and made from plant-
based materials are now available. Stevia, coconut and palm sugar, and agave
nectar are touted by health advocates are the new age sugar. Though may be not
as sweet as refined white sugar, they have flavor qualities that complement and
even uplift the dish they sweeten. It is important to consider the characteristics
of these natural sweeteners when using it in dessert preparations.

In preparing a healthy dessert, consider the following: Do you want a low-
glycemic dish? If so, simply replace refined white sugar with a natural sweetener.
Note that healthier sugars like brown sugar, raw sugar, molasses and even honey
are still high-glycemic though they contain considerably more nutrients that white
sugar. Even if you do not have issues with high blood sugar, there are still health
benefits attributed to a low-glycemic lifestyle from the management of Type 2
diabetes, obesity and heart disease.

For an overall healthier pastry, cake or pie, replace flour partly with whole wheat
and fresh or dried fruit instead of canned. Even without natural sweeteners
which can be difficult to find, fruits like berries, apple and applesauce provide
natural sweetness and moisture.
Almond Galette with Red Fruits




Chef Gerard Vie prepares almond galette with red fruits. Preparation and cooking
time is 20 minutes. Galette is, in fact, a French term signifying a flat cake that can
be either sweet or savory. They can be made from puff pastry, yeast raised dough
like brioche, or with a sweet pastry crust. The toppings can vary also; ranging from
fresh, candied or dried fruits, creams, nuts, and jams for sweet galettes, with
savory ones being topped with an assortment of meats and/or cheeses.

Servings: 4
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Recommended Wine: Loupiac

Ingredients:
Almonds, 4.48 oz. (about ½ cup) sugar, 7 tablespoons flour, 5 eggs, 1 lb.
raspberries or seasonal red fruits, 3.5 oz. (7 tablespoons) thick cream (creme
fraiche), 3.5 oz. (7 tablespoons) creme patissiere (vanilla flavored custard filling
for pastries and cakes), raspberry sauce
Preparation Instructions:
Mix the almonds, sugar, flour, and eggs, creating dough. Spread this dough as thin
as possible in a cake form. Bake it in a preheated oven for about 5 minutes.
Meanwhile, mix the creme patissiere with an equal amount of cream. Place the
almond cake in the middle of a plate. Pour the cream on one side of the cake. Top
with red fruits. For decoration, add some mint leaves, raspberry sauce, and
berries. You may serve the rest of the cream in a gravy bowl. In another bowl,
serve the rest of the raspberry sauce.


White peach rosace with vanilla ice-
cream, raspberry sauce and basil




Everybody loves ice cream and is a popular dessert or snack with adults and kids
alike. The range of ice creams available in the market is wide and deliciously
distracting. But the appeal of homemade ice cream has still not lost its old-world
appeal. What better way to whip up a surprise treat for the kids than to get a
good old homemade ice cream recipe and conjure up a delight!
Servings: 4
Preparation Time: 25 minutes
Cooking Time: 25 minutes
Recommended Wine: Sauternes

Ingredients:
4 large white peaches, 1 bouquet basil leaves For the raspberry juice: 0.66 lbs.
mature raspberries, 1 lemon, 7 tablespoons powdered sugar

Preparation Instructions:
Sprinkle the raspberries with powdered sugar and place them in a vegetable mill.
Strain. Add lemon juice and refrigerate. Peel the peaches and cut them in
quarters. Refrigerate in a compote dish. (If you prepare them ahead of time,
squeeze a little lemon juice on them so they don’t brown.) Presentation: Arrange
the peach quarters in the form of petals, inside a concave dish. Pour the raspberry
juice over the peach slices. Place a scoop of vanilla ice cream in the middle and a
basil leaf on top of this. Cut the remaining basil leaves, following their length, into
thin long slices and use as garnish.
Creme brulee with red fruits




Creme Brulee or "burnt cream" is satiny custard. It is served chilled yet glistens
with a crisp caramelized sugar top, which when tapped with the back of a dessert
spoon, shatters like glass, revealing that cool, vanilla-infused custard hidden
below. This is a very easy no fail Creme Brulee recipe! It's so rich and creamy
everyone will think you are a professional cook! Just don't tell them how easy it is.

Cooking Time: 25 minutes
Recommended Wine: Maury

Ingredients:
3 1/2 oz. strawberries, 1.8 oz. raspberries, 0.88 oz. black currants, 0.88 oz. red
currants, 0.88 oz. blueberries, 6 eggs, 0.35 lbs. sugar, 0.46 lbs. cream, ½ vanilla
pod, brown sugar
Preparation Instructions:
Separate the egg yolks and whites. Blanch the yolks with sugar. Boil the cream
with the vanilla. Pour this mixture over the yolks. Place on low heat until the
mixture becomes thick. Divide the mixture into 4 small cups. Cover with cream,
sprinkle with brown sugar, and brulee it in a salamander iron.
