HISTORY
Bodegas Arrayán was founded by entrepreneur José María Entrecanales and his wife, María Marsans, on
their estate, La Verdosa, which is located in Santa Cruz del Retamar, Toledo.
Bodegas Arrayán was created with the goal of using innovative viticultural techniques in harmony with the
ecosystem of the Mediterranean pasture land (dehesa) to create a high-quality wine with a strong
personality.

To this end, renowned Australian viticulturist, Richard Smart, performed and exhaustive stuydy on the
terrain, soil, and climate to choose the optimal exposures, orientations and varieties in accordance with the
winery’s goals.
Planting of Cabernet Sauvignon, Merlot, Syrah and Petit Verdot commenced in 1999, in harmony with the
holm oak trees scattered around the estate.
HISTORY
The autochthonous variety of the area is the Garnacha.
We opted to look old vines of this variety with unique
terrois as to soil, altitude and sun exposure.
The winery’s first vintage went on sale at the end of
2003. The unique features of Bodegas Arrayán and its
wines captured the attention of journalists, opinion
leaders and consumers.
Since then, Arrayán has expanded its family of wines
and it currently has an excellent brand line comprised
of 7 reds, four of which are monovarietals (Arrayán
Syrah, Arrayán Petit Verdot, Garnacha de Arrayán and
La Suerte de Arrayán) and three coupages of the four
varieties planted in La Verdosa (Arrayán Selección,
Arrayán Premium and Estela de Arrayán), together a
fresh and fruity young rosé (Arrayán Rosado).
All Bodegas Arrayán wines are under the Méntrida
Designation of Origin and Vinos de la Tierra de Castilla
y León.
LOCATION
The La Verdosa estate is located in the municipality of Santa Cruz de Retamar, in the north-west of Toledo
province, at the centre of the Méntrida depression (the lowest point in Spain’s central plateau). The relief is
undulating, with rounded hills, depressions and gullies; the vegetation, predominated by the holm oak, is
typical of Mediterranean dehesa (pasture land).
It may be one of the purest examples of this ecosystem because grazing is minimal.
The river Alberche crosses the estate, which has an abundance of Mediterranean game animals, principally
deer and wild boar.
THE VINEYARD
A small 26-hectare plot in the north-west end of the
property, at an altitude of between 470 and 510 metres
above sea level and with the right climate features, was
chosen for the vineyard.
The alluvial soil, from the erosion of the granite massifs in
Spain’s central plateau, is uniform to a considerable depth
and has an intermediate structure allowing for perfect
drainage and deep rooting. The soil in the vineyard is acidic,
with a high silicate content, contributing to character of the
terroir.
The carbonate and organic content of the soil is low.
La Verdosa has a total of 13.25 hectares under Syrah, 4.76
ha. under Merlot, 4.1 ha. under Cabernet Sauvignon and
1.57 under Petit Verdot, with vines planted in pairs.
We have about 3 hectares under Garnacha from 40 to 60
years old in the vicinicity of the estate, in the municipalities
of El Real de San Vicente and Cebreros at an altitude of
between 750 and 980 metres.
No chemical herbicides of fertilisers are used.

VINEMAKING AND AGING
The grapes are harvested using a combination of mechanical and manual methods, and then transported
without delay to the winery (situated alongside the vineyards) to ensure that their qualities are preserved
intact.
Selected bunches of grapes are then destemmed and vinified in smaill fermentation tanks.
Fermentation and maceration take place at controlled temperatures over a period of 20-30 days, during
which the cap of grape skins and other solids is punched down and pumped over many times.
VINEMAKING AND AGING
At the end of theis phase, the wine is transferred to
stainless steel tanks, where it undergoes malolactic
fermentation.
In early winter, the wine is racked into new Allier oak
casks for ageing.

OUR WINES / ESTELA DE ARRAYÁN
• D.O.P.: Méntrida
• Varieties: 55% Syrah, 20% Merlot, 15% Cabernet Sauvignon, 10% Petit
Verdot
• Duration of cask ageing: 17 months in French oak
• Alcoholic strength: 13.8% Vol.
• Production: 2.618 bottles
• Winemaking method: This wine was made after racking the wine from
tanks destined for the Premium category. Free-run juice is allowed to
drain from the pomace without any pressure being applied. Assemblage
is followed by a 17-month maturation period in new French oak casks.
• Tasting Notes
• Eye: Deep cherry red colour with purplish hues.
• Nose: Very expressive nose of notable finesse. Hints of ripe fruit,
cherries in brandy and spices with flowery references.
• Mouth: Nicely structured in the mouth with plenty of body.
Outstandingly elegant, long, lingering finish. This is a wine for laying
down and for drinking any time in the next ten years.
OUR WINES / Garnacha de ARRAYÁN
• Vino de la Tierra de Castilla y León
• Variety: 100% garnacha
• Duration of cask ageing: : 16 months in French oak Allier
• Alcoholic strength : 15%
• Production: 1000 bottles
• Tasting notes:
• Eye : this wine presents a middle layer of a lively cherry colour.
• Nose: highlights its floral aromas as well as fennel and orange peel.
• Palate: In mouth is silky, with a long and structured plot. Its powerful
minerality is emphasized in the aftertaste. Altogether, is an elegant
Grenache, with great typicity of the slate slopes of Cebreros.

• D.O.P.: Méntrida
• Varieties: 55% Syrah, 20% Merlot, 15% Cabernet Sauvignon, 10% Petit
Verdot
• Duration of cask ageing: 14-16 months in Allier-type French oak.
• Alcoholic strength: 14% Vol.
• Production: 12.000 bottles
• Tasting Notes
• Eye: Bright cherry red.
• Nose: Powerful jammy aromas with mineral and balsamic undertones,
and nicely integrated oak.
• Mouth: The flavour is rich in toasty notes characteristic of ageing, with
occasional flourishes of cocoa and dark chocolate. Earthy and luscious,
warm and fleshy in the mouth, with evident, well-matured tannins. A
full-bodied wine.

• Varieties: 35% Syrah, 30% Merlot, 30% Cabernet Sauvignon, 5% Petit
Verdot
• Duration of cask ageing: 8 months in Allier-type French oak casks.
• Alcoholic strength: 14% Vol.
• Production: 35.000 bottles
• Tasting Notes
• Eye: Dense cherry red, tinged with purple.
• Nose: Pronounced, clean nose with pleasant, red-fruit aromas (cherry,
blackcurrant, …) and hints of toast.
•Mouth: Delicate and fresh in the mouth with a long, jammy, spicy finish
that exhibits a fine balance between fruit and wood.

•Variety: 100% garnacha
•Duration of cask ageing: 12 months in French oak Allier
•Alcoholic strength : 14.50%
•Production: 6000 bottles
•Tasting notes:
• Eye : intense Garnet with violet blue color.
•Nose: the nose will emphasize fruit aromas of cherry, strawberry,
characteristic of the garnacha variety served with spicy.
•Mouth: has good structure with polished tannins. Altogether it is a
friendly, round wine with good complexity

• Eye: Very dense, bright cherry/garnet red.
• Nose: Toasty aromas, pleasantly evocative of ripe grape skins.
• Mouth: Full of flavour with hints of plum jam and oak-derived, earthly,
herbaceous undertones. A complex, fleshy wine with powerful, wellintegrated tannins.

• Varieties: 100% Petit Verdot
• Duration of cask ageing: 12 months in Allier-type French oak.
• Alcoholic strength: 14% Vol.
• Production: 4.600 bottles
• Tasting Notes
• Eye: Lovely, very dark, plum colour.
• Nose: Powerful aroma with fruity grace notes.
• Mouth: Meaty in the mouth, with flavours suggestive of woodland
fruits and dates, and other nuances attributable to ageing. Warm and
robust on the palate, yet with subtly seductive hints of sweetness.

• Varieties: Syrah and Merlot.
• Alcoholic strength: 13.50% Vol.
• Production: 18.500 bottles
• Tasting Notes
• Eye: Bright strawberry red colour, crystal-clear and sheeny.
• Nose: Clean and intense, with pronounced suggestions of red fruits
and hints of citrus and tropical fruits.
• Mouth: Plenty of definite, nicely-balanced flavour. Pleasant in the
mouth, with a long, lingering finish.

OUR WINES / Garnacha de ARRAYÁN • Vino de la Tierra de Castilla y León • Variety: 100% garnacha • Duration of cask ageing: : 16 months in French oak Allier • Alcoholic strength : 15% • Production: 1000 bottles • Tasting notes: • Eye : this wine presents a middle layer of a lively cherry colour. • Nose: highlights its floral aromas as well as fennel and orange peel. • Palate: In mouth is silky, with a long and structured plot. Its powerful minerality is emphasized in the aftertaste. Altogether, is an elegant Grenache, with great typicity of the slate slopes of Cebreros.

OUR WINES / ARRAYÁN Premium • D.O.P.: Méntrida • Varieties: 55% Syrah, 20% Merlot, 15% Cabernet Sauvignon, 10% Petit Verdot • Duration of cask ageing: 14-16 months in Allier-type French oak. • Alcoholic strength: 14% Vol. • Production: 12.000 bottles • Tasting Notes • Eye: Bright cherry red. • Nose: Powerful jammy aromas with mineral and balsamic undertones, and nicely integrated oak. • Mouth: The flavour is rich in toasty notes characteristic of ageing, with occasional flourishes of cocoa and dark chocolate. Earthy and luscious, warm and fleshy in the mouth, with evident, well-matured tannins. A full-bodied wine.

OUR WINES / ARRAYÁN Selección • D.O.P.: Méntrida • Varieties: 35% Syrah, 30% Merlot, 30% Cabernet Sauvignon, 5% Petit Verdot • Duration of cask ageing: 8 months in Allier-type French oak casks. • Alcoholic strength: 14% Vol. • Production: 35.000 bottles • Tasting Notes • Eye: Dense cherry red, tinged with purple. • Nose: Pronounced, clean nose with pleasant, red-fruit aromas (cherry, blackcurrant, …) and hints of toast. •Mouth: Delicate and fresh in the mouth with a long, jammy, spicy finish that exhibits a fine balance between fruit and wood.

OUR WINES / La Suerte de ARRAYÁN • D.O.P.: Méntrida •Variety: 100% garnacha •Duration of cask ageing: 12 months in French oak Allier •Alcoholic strength : 14.50% •Production: 6000 bottles •Tasting notes: • Eye : intense Garnet with violet blue color. •Nose: the nose will emphasize fruit aromas of cherry, strawberry, characteristic of the garnacha variety served with spicy. •Mouth: has good structure with polished tannins. Altogether it is a friendly, round wine with good complexity

A complex, fleshy wine with powerful, wellintegrated tannins.

OUR WINES / ARRAYÁN Petit Verdot • D.O.P.: Méntrida • Varieties: 100% Petit Verdot • Duration of cask ageing: 12 months in Allier-type French oak. • Alcoholic strength: 14% Vol. • Production: 4.600 bottles • Tasting Notes • Eye: Lovely, very dark, plum colour. • Nose: Powerful aroma with fruity grace notes. • Mouth: Meaty in the mouth, with flavours suggestive of woodland fruits and dates, and other nuances attributable to ageing. Warm and robust on the palate, yet with subtly seductive hints of sweetness.

Pleasant in the mouth, with a long, lingering finish.
