1. Filet Mignon with Mustard Cream and Wild Mushrooms- Black Ox Bistro
Ingredients:
3 tablespoons unsalted butter
1 pound mixed wild mushrooms, such as cremini and shiitake, trimmed
Kosher salt, and freshly ground pepper
4 (6-ounce) beef fillets, approximately 1 1/2 inches thick
2 tablespoons grainy mustard
1 finely chopped shallot

2 tablespoons chopped fresh flat-leaf parsley. If needed, keep some ready for seasoning.
Directions:
Heat 2 tablespoons of butter in a large, non-sticky frying pan over medium heat. Add
the mushrooms. ½ teaspoon pepper and ½ teaspoon of salt. Cook for about 6
minutes by stirring occasionally until it turns brown.
Heat another 1 tablespoon of butter in the pan after wiping it out. Make sure the
heat is high. Sprinkle the beef along with salt and pepper and cook it for about 12
minutes over a medium flame, until it turns brown. Then transfer the beef to a
separate platter.
Add the chopped shallot to the pan and cook it for about 3 minutes. Then add the
mustard sauce and heavy cream and boil them until slightly thickened for about 3
minutes. Spoon the hot sauce on the plate, place the beef on it and add the

1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
12 radicchio leaves
2 tablespoons fresh chopped parsley leaves

1. Place the steak pieces between 2 pieces of parchment or wrapping paper and pound
it to a thickness of about 1/ inch. Cut it diagonally against the grain into four equal
pieces.
2. Mix 1 tablespoon of olive oil, sugar, garlic and balsamic vinegar in a small bowl.
