The choice of ingredients in making a delicious pasta sauce has
always been a challenge before the advent on Italian chefs who
introduced various ways of preparing pastas by combining
ingredients never seen before on any recipe book. Today, we will
be making one of the healthiest pasta recipes you can make

Let’s go started with the ingredients.
Fine sea salt
12 ounces dry orecchiette or farfalle
1 tablespoon olive oil, plus more for drizzling
1 bunch scallions (about 8), trimmed and thinly sliced (keep the
whites and greens separate)
2 large ears corn, shucked and kernels removed (2 cups kernels)
½ teaspoon ground black pepper, more for serving
3 tablespoons unsalted butter
½ cup grated Parmesan cheese, more to taste
⅓ cup torn basil or mint, more for garnish
¼ teaspoon red pepper flakes, or to taste
Fresh lemon juice, as needed
Now let’s start cooking.
Always be sure to use well salted water in boiling your pasta until
you reach that firm state where it is cooked well but won’t easily
break when tested. This will help in achieving that long, firm, and
right pasta taste everyone will surely love.
Once, boiled, set aside at least 1/2 cup of pasta water as we will
need this later.
2. Next, heat oil in a large pan over considerably medium heat. Once
heated enough, throw in your scallion whites, add a pinch of salt
and cook for 3 minutes until soft. After which, you may add up all
of the other ingredients but only 1/4 out of the 2 cups kernel.
Let it simmer for another 3-5 minutes until the corn is tenderized.
Next, add 1/4 teaspoon salt and pepper before transferring
everything to a blender. Blend the mixture until smooth. Add
water if necessary.
Meanwhile, hit the same skillet over high heat, add butter and let
it melt. Add the rest of the 1/4 cup corn and cook for 1-2 minutes
until tender. Add the corn puree and cook for 30 more seconds to
combine flavors properly.
Lastly, reduce the heat to medium, mix pasta in as well as the
reserved 1/4 pasta water. Cook the mixture for one minute. Drop
in the 1/4 cup of scallion greens, parmesan, red pepper flakes and
other herbs. Sprinkle it with 1/4 teaspoon salt and pepper and top
it with freshly-squeezed lemon juice to add taste.
Transfer the mixture to your serving dish and sprinkle it with your
