For i-adjectives, you just cut the い
off and add くない , like so:
あまい → あま + くない → あまくない
amai → ama + kunai → amakunai

There is one odd ball to be aware of
though – いい , which means good in
Japanese...

...has an irregular negative form. It
changes from いい to よい .
