Introduction
• Beer is the world's most widely consumed
alcoholic beverages.
• It is the third most popular drink overall,
after water and tea.
• The production of beer is called brewing.
• It is mainly derived from cereal grains—most
commonly malted barley, although wheat,
maize (corn), and rice are widely used.
• The strength of beer is usually around 4% to
8% or 9% alcohol by volume.
History
• The early Neolithic or 9500 BC, when cereal was first farmed, and is
recorded in the written history of ancient Iraq and ancient Egypt.
• Approximately 5000 years ago, workers in the city of Uruk (modern
day Iraq) were paid by their employers in beer.
• During the building of the Great Pyramids in Giza, Egypt, each
worker got a daily ration of four to five litres of beer, which served
as both nutrition and refreshment.
• The earliest known chemical evidence of barley beer dates to circa
3500–3100 BC from the site of Godin Tepe in the Zagros
Mountains of western Iran.
• Some of the earliest Sumerian writings contain references to beer;
examples include a prayer to the goddess Ninkasi, known as "The
Hymn to Ninkasi“. which served as both a prayer as well as a
method of remembering the recipe for beer in a culture

made in China around 7000 BC.

1.Milling the grain
malt are crushed together to break up the grain
kernels in order to extract fermentable sugars to
produce a milled product called grist.
2.Mash Conversion
The grist is then transferred into a mash tun,
where it is mixed with heated water in a
process called mash conversion
3.Lautering
The mash is then pumped into the lauter tun, where a
sweet liquid (known as wort) is separated from the grain
husks.
4.The boil
The wort is then collected in a vessel called a
kettle, where it is brought to a controlled boil
before the hops are added.
5.Wort separation and cooling
After boiling, the wort is transferred into a whirlpool for the
wort separation stage. During this stage, any malt or hop
particles are removed to leave a liquid that is ready to be
cooled and fermented.
6.Fermentation
To start the fermentation, yeast is added during the filling of the
vessel. Yeast converts the sugary wort into beer by producing
alcohol, a wide range of flavors, and carbon dioxide (used later in
the process to give the beer its sparkle).
7.Maturation
After fermentation, the young “green” beer needs to be
matured in order to allow both a full development of
flavours and a smooth finish.
8.Filtration, carbonation, and
cellaring
the beer is filtered, carbonated, and transferred to the bright
beer tank, where it goes through a cellaring process that
takes 3-4 weeks to complete. Once completed, the beer is
ready to be packaged

Classifications
•Lager: It is stored for a specified period before being
bottled or canned.
• Pilsner: A type of lager beer, it is light with 3.0 - 3.8%
alcohol and has a medium hops flavor.
• Ale: Top fermented, this kind of beer has distinct hop
aroma. The alcohol content is around 4 - 5%.
•Stout: Dark with burnt flavor and strong malt aroma; it is
heavily hopped and contains 5 - 6.5% alcohol.
• Porter: This is less dark than stout, even less hopped and is
somewhat sweet. Alcohol content is around 5%.
• Creamy Ale: A highly carbonated beer that is produced by
a combination of Ale and lager.
• Malt: A strong flavored, high alcohol content beer that
ranges in flavor and colors.

Introduction • Beer is the world's most widely consumed alcoholic beverages. • It is the third most popular drink overall, after water and tea. • The production of beer is called brewing. • It is mainly derived from cereal grains—most commonly malted barley, although wheat, maize (corn), and rice are widely used. • The strength of beer is usually around 4% to 8% or 9% alcohol by volume.

History • The early Neolithic or 9500 BC, when cereal was first farmed, and is recorded in the written history of ancient Iraq and ancient Egypt. • Approximately 5000 years ago, workers in the city of Uruk (modern day Iraq) were paid by their employers in beer. • During the building of the Great Pyramids in Giza, Egypt, each worker got a daily ration of four to five litres of beer, which served as both nutrition and refreshment. • The earliest known chemical evidence of barley beer dates to circa 3500–3100 BC from the site of Godin Tepe in the Zagros Mountains of western Iran. • Some of the earliest Sumerian writings contain references to beer; examples include a prayer to the goddess Ninkasi, known as "The Hymn to Ninkasi“. which served as both a prayer as well as a method of remembering the recipe for beer in a culture

  • 8. 1.Milling the grain malt are crushed together to break up the grain kernels in order to extract fermentable sugars to produce a milled product called grist.
  • 9. 2.Mash Conversion The grist is then transferred into a mash tun, where it is mixed with heated water in a process called mash conversion
  • 10. 3.Lautering The mash is then pumped into the lauter tun, where a sweet liquid (known as wort) is separated from the grain husks.
  • 11. 4.The boil The wort is then collected in a vessel called a kettle, where it is brought to a controlled boil before the hops are added.
  • 12. 5.Wort separation and cooling After boiling, the wort is transferred into a whirlpool for the wort separation stage. During this stage, any malt or hop particles are removed to leave a liquid that is ready to be cooled and fermented.
  • 13. 6.Fermentation To start the fermentation, yeast is added during the filling of the vessel. Yeast converts the sugary wort into beer by producing alcohol, a wide range of flavors, and carbon dioxide (used later in the process to give the beer its sparkle).
  • 14. 7.Maturation After fermentation, the young “green” beer needs to be matured in order to allow both a full development of flavours and a smooth finish.
  • 15. 8.Filtration, carbonation, and cellaring the beer is filtered, carbonated, and transferred to the bright beer tank, where it goes through a cellaring process that takes 3-4 weeks to complete. Once completed, the beer is ready to be packaged

Classifications •Lager: It is stored for a specified period before being bottled or canned. • Pilsner: A type of lager beer, it is light with 3.0 - 3.8% alcohol and has a medium hops flavor. • Ale: Top fermented, this kind of beer has distinct hop aroma. The alcohol content is around 4 - 5%. •Stout: Dark with burnt flavor and strong malt aroma; it is heavily hopped and contains 5 - 6.5% alcohol. • Porter: This is less dark than stout, even less hopped and is somewhat sweet. Alcohol content is around 5%. • Creamy Ale: A highly carbonated beer that is produced by a combination of Ale and lager. • Malt: A strong flavored, high alcohol content beer that ranges in flavor and colors.
