on the hardeningcharacteristicsof rice grainsaftercooking.
The experimental resultsshowedthatnotonlycookingconditionsbutalsodryingconditionsgreatly
affectedthe hardnessof parboiledgrains.Especially,the conditionof moisturemigrationduringdrying
processthat came from the particularrelationbetweenthe finalmoisture contentandthe dryingperiod
playedveryimportantrole inthe hardeningcharacteristicsof parboiledgrains.
