added, the mixture
will gelatinize.

Retrogradation is the process the dough
undergoes when it dries out.
To keep it moist, you need a retrogradation
inhibitor.
These are usually waxy starches.
5. surfactants
Since the compound is now to sticky,
surfactants are added.
Must contain hydrophilic and lipophilic
compounds.
Surfactants make up 1% of the compound.
6. storage
Play-Doh must be
kept in air tight
containers.
If they are not, the
retrogradation
inhibitors will dry out,
causing the
compound to dry out.
