5. SULTANAS TYPE (SULTANI) GRAPES This is most popular and widely consumed seedless variety in the world cultivated in Aegean Region

HARVESTING - 1 Turkey is the biggest Sultanas (Dried Seedless Grape) producer and exporter County in the World and ranks among top 5 largest Grape Grower countries thanks to own very suitable climate. Turkey manages 38 % of the world’s Sultanas production (ca. 260.000 Tons) and realizes % 3 3 World Export annually (ca. 220.000 Tons) Source : INC
7. HARVESTING - 2 In Turkey, 30% of Grapes crop is offered as fresh, 37 % is used in Sultanas production, 30 % is used as confectionery industry and 3 % is used in wine industry. “Seedless grape” takes the first place in our export of the table grapes. A seedless variety, “sultani” constitutes 95 % of the exported grapes.
8. DIPPING Grapes are dipped into a dipping solution before drying, in order to remove the natural wax from the skin of the fruit. This accelerates drying (max. 10 days) as the water is able to remove faster, thus decreasing the rate of enzymatic browning reactions. Consequently, lighter colored “Sultanas” are obtained compared to the non-dipped “Raisins”. D ipping solution consist ing of water 100 kg, O live oil 0,6 kg and potassium bi carbonate 5kg
10. SUN DRYING (NATURAL GROUP) According to TS-3411 (Raisins Seedless Standard) products are grouped according to their Drying Method as follows; 1- Processed (with S02) 2- Unprocessed (Natural) 2. A - Non-dipped Natural (Raisins) 2. B - Dipped Natural
11. Sun Dried Sultanas are bleached with SO2 (to avoid deterioration and discoloration). Well-dried Sultanas are p re-cleaned by winnowing and removing large pieces of stalks, stones, very light berries and foreign matters by means of Sieves and Aspirators. 12. PROCESSING STAGES AT FACTORY -1 1. First Checks and Inspections out of Factory Includ ing vehicles for infestation 2. Quality analyses (Physical, Chemical, Organoleptic and microbiological) and Approval each raw material party registered acc. to their Quantity, Location, sugared, Producer Name, Berry Size, Moisture, foreign materials, taste, stem, unripe, Mould, smell and carries a consignment number for traceability- As described in EU regulation No:178/2002 3. First Classification and Grouping (size , type and quality ) 4. Pre-cleaning and Sorting : Winnowing, static picking and removing of large pieces of stalks, stones, metals , plastics, foreign matters by Magnets, Sieves and Aspirators.

PROCESSING STAGES AT FACTORY -2 5- Sizing (During Pre-cleaning by sieving machines) and Washing 6 - 2.nd Mechanical Cleaning Section ( by Sieves & Aspirators) 7 - 2.nd W ashing and resting : Washing, Cleaning and eliminating of Stalks, Cap-stems Loose, Attached Cap- stems, Stones, Grits, Glass, Metal , Hair, Straw-grass By Washing Line (in UV filtered , chlorinated potable water ) 8- 3 x Laser Scanning (of stalks, defects, discolored, rotten and damaged fruits, Foreign materials; stems, stones, glass, metals..) and Optic Sorting - Selection Line for Mould Berries, Berries with seed, Cap-stems Loose, Attached Cap-stems, Damaged, Sugared, Undeveloped , Shriveled and defect Berries , embedded Stalk are picked by skilled worker s 9- 2 x Hand Picking Belt and Final Checks (on white laminated table under bright Light s )This Process is carried out until meeting Buyer’s Spec’s. 10- Coating with Vegetable Oil , Metal Detection and Packing ( in Bulk cartons or Retail pack’s)
