5. DEFINITION
The word “Organic” means an ecological management production system
that promotes and enhances biodiversity, biological cycles and soil
biological activity. It is based on the minimal use of off-farm inputs and on
management practices that restore, maintain and enhance “ecological
harmony”- USDA
Thus, Organic farming recognizes the direct connection between our
health and how the food we eat is produced. Artificial fertilizers are
banned and farmers develop fertile soil by rotating crops and using
compost, manure and clover.
